Most often, the dough on kefir is made without the use of yeast, which allows you to spend very little time on cooking such dishes as pies on kefir. But there are recipes and pie test for kefir with yeast.
Kefir non-yeast dough is a great alternative to regular yeast. Pies on this test are no less lush, and much less time is spent on their preparation. And not all people like yeast dough. Kefir pies without yeast can be prepared in many ways. We will talk about two of them below.
Kefir pies. The first recipe: you need to take a glass (250 ml) of kefir, three eggs (you can three. As you know, for baking a large number of eggs only plus), a tablespoon of sugar, a pound of wheat flour, salt to taste and citric acid. First of all, the eggs are thoroughly ground with sugar, then kefir is added to them - and all this is thoroughly mixed.
Now flour - it is extremely important not to forget to sift it. For a non-yeast dough, this is especially important, because the flour is well saturated with air. The dough from the sifted flour turns out magnificent and airy. Citric acid, salt and soda are added to the flour thus prepared, and then mixed.
The next step: both mixtures must be combined and thoroughly kneaded. It remains only to put the finished dough in the refrigerator. At this time, chemical reactions take place in it, as a result of which oxygen is formed inside the test.
While the dough is "ripening", the hostess can do the filling. The choice of filling completely and completely depends on the preferences of the hostess and her family. fillings for kefir pies can be both sweet (with jam, fresh berries and fruits), and salty (meat, fish, vegetables, etc.)
Kefir pies. Option two: a liter of kefir, half a cup of sugar, 1 kg of flour, 100 ml of vegetable oil, a tablespoon of salt.
Kefir is poured into a container, we add quicklime soda into it and stir it well to make the reaction go. Then pour sugar and salt and pour in the butter. Then slowly add the flour, thoroughly mixing the mixture. We leave the finished dough for a while in the refrigerator. The purpose of this action is the same as in the previous case, to allow the test to insist, "mature".
Kefir pies according to any of these recipes can be either fried or baked. The only negative regarding this non-yeast dough is that after cooking it quickly settles. This means that such pies are better to eat until they have cooled. But they prepare quickly, which is their undoubted advantage. You can prepare them in small quantities for tea or in case of unexpected arrival of guests.
Kefir pie dough can also be prepared with yeast. In this case, the dough is especially soft and lush. To make kefir pies with yeast, you will need the following ingredients: flour (500 g), 2 eggs, sugars (60-80 g), kefir (250 ml), salt (19 g), milk (50 g), margarine (75 g), yeast (25 g). If you use dry yeast, then they need to take 1 tablespoon.
First of all, yeast is bred in warm milk. Then, in a separate container, kefir, sugar and salt are mixed, eggs are added to them - and all this is mixed. Then milk with yeast is poured here. It remains to introduce flour and knead the dough.
Like any yeast, this dough will need to be left warm for 1.5-2 hours to raise. It rises quite strongly, almost three times. This should be considered when choosing dishes for kneading dough. After that, you can form pies and lay them on a baking sheet. Do not forget that after the formation of the pies, they must be left warm for half an hour before being placed in the oven.
Kefir yeast pies are especially lush and airy. And most importantly, they donβt call up for long. This is a distinctive feature of this recipe. These pies also look very beautiful and appetizing. That's how varied kefir pies can be!
