Despite the simplicity of preparation, it can not be called easy in calories. This dish is very hearty, tasty and appetizing. You can cook it in several versions and with different sauce.

For their preparation you will need about 300 grams of minced meat. It is better if it will be several types of meat (for example, beef + pork). Also take about 100 grams of rice. There is also room for your own preferences. You can take ordinary round, wild or long-grain rice. As ingredients, you will also need a glass of water, two small onions or one large, one carrot and one egg. You need to prepare a mixture of stewed vegetables in advance, but any raw ones will do. We also prepare one spoonful of ketchup and mayonnaise, two tablespoons of sour cream, a small spoonful of mustard, seasonings (paprika, salt, turmeric, any pepper and oregano) and fresh herbs (dill).

These are all the ingredients you need to make hedgehogs with rice. Now let's start creating them. Rice must be boiled until half cooked. Then we rinse it well and dry it a little. Stuffing mix with finely chopped onions, eggs and spices. After that, knead it thoroughly. Now add boiled rice to it and mix well again.

Next, we form the hedgehogs from the minced meat. You need to do this with your hands dipped in water so that the meat does not stick to them. We put the pan on the fire and fry the hedgehogs in a small amount of vegetable oil. Separately, mix sour cream, mustard, mayonnaise, ketchup and stewed or raw vegetables. 10 eggs are pre-boiled and peeled. Then cut them into two halves and remove the yolk. Knead the yolks with a fork and mix them with grated cheese, carrots, chopped garlic, mayonnaise or sour cream. Salt to taste. We start half the eggs with this mixture and combine them in pairs.

Add the chopped onion, pepper, egg, salt to the minced meat and mix it well. Now, in a small amount of minced meat, lay the stuffed egg and form an oval. Then we give it a slightly elongated shape that resembles a hedgehog. Imitate spaghetti needles from above. We send the hedgehogs to the oven for 30-40 minutes. You can serve them with any side dish.
