However, a beetroot snack for the winter can be a great help when you need to quickly cook something or just have a snack. It can be used as a dressing for borscht or cold beetroot soup, added to salads and eat just like that, spreading on bread. Therefore, we advise you not to bypass this root crop, making conservation. We suggest you try to cook two very tasty dishes that will go with a bang in the winter.

The first recipe for beetroot snacks is a kind of salad with sweet pepper. Budget option, but very tasty. For him you will need:

  • beets - about 3 kg;
  • bell pepper (preferably red) - a pound;
  • onions - about 1.5 kg.

In addition to these components, you need the ingredients for the marinade:

  • table vinegar - a glass;
  • vegetable oil - a glass;
  • sugar - half a glass;
  • water - about 300 ml;
  • salt - 2 tablespoons.

This winter beetroot appetizer is prepared very simply. The root crop needs to be pre-cooked, peeled and chopped on a coarse grater (you can simply cut into strips). Sweet pepper cut into slices, and onions - rings. In a separate pan, cook the marinade - to do this, mix all the ingredients listed above, put on fire and cook, stirring. When it boils, add pepper and onion, cook for 7 minutes, then you can pour the beets. All together is boiled for another 10 minutes. After that, it remains only to spread the snack on sterilized jars and close until winter. Nothing complicated.

And the next beetroot snack for the winter, which is definitely worth a try, is caviar. With gray or Borodino bread she is eaten instantly! We will cook based on a kilogram of beets. You will need these components:

  • carrots - a pound;
  • ripe tomatoes - a pound;
  • garlic - 5 cloves;
  • apple cider vinegar - 2 tablespoons;
  • vegetable oil - 3 large spoons;
  • salt and spices (basil, oregano, turmeric, black pepper, etc.) - to taste.

Wash beets and carrots, peel and grind. We pour tomatoes with boiling water and remove the skin from them, and then grind in a blender (you can use a meat grinder). Peel and finely chop the garlic.

In a cauldron with a thick bottom, we heat the vegetable oil and throw carrots with beets into it. Stew, sometimes stirring, for 10 minutes. Then mashed tomatoes and garlic are used, mix everything well, cover and cook for 20 minutes. It's almost over - pour vinegar, add salt, spices. We cook for another 7 minutes. Now we cool and chop our mixed vegetables to a uniform state of caviar in a blender. The second beetroot appetizer is ready for the winter. We lay out in jars and close with plastic lids. Store in a cool place.
