Napoleon is one of many people's favorite cakes. Soft multi-layer cakes and delicious custard are what made it the cake of many generations. However, today not every Napoleon meets former standards. Therefore, to please yourself and loved ones with a delicious dessert from childhood, it is worth preparing it at home.
Cake "Napoleon from Emma's Grandmother" with custard
What ingredients are required:
For the test:
- Flour - four hundred grams.
- The egg is one.
- Baking margarine - three hundred grams.
- Water is one hundred milliliters.
- Salt is half a teaspoon.
- Vinegar - one tablespoon.
For cream:
- Flour - one hundred grams.
- Milk - seven hundred and fifty milliliters.
- Oil - fifteen grams.
- Eggs - three pieces.
- Sugar - two hundred twenty grams.
- Vanilla sugar - fifteen grams.
For powder:
- Powdered sugar - two tablespoons.
Prepare the dough
We use a custard recipe to make Napoleon from Emma’s grandmother cake. In order to simplify the cooking process as much as possible, we will bake cakes from a simple, quickly prepared layers of dough. Initially, it is necessary to prepare a liquid base. If you have measured utensils in your kitchen, then this is exactly the case when you need to use it, since it is necessary to strictly observe all the proportions indicated in the recipe for the cake "Napoleon from Emma's Grandmother".
So, in a measuring bowl, break one egg, add half a teaspoon of salt, one tablespoon of vinegar (7%) and stir. Next, you need to pour so much chilled water in the refrigerator so that the entire volume of liquid is 190 ml. Be sure to place the prepared mixture in the refrigerator.
Next, we continue the process of preparing puff pastry. Sift 375 g of wheat flour onto a kitchen board. Grate 300 g of margarine with a high percentage of fat, well frozen in the refrigerator, on top of it on a coarse grater, constantly gently mixing it with flour, but not rubbing it. Make a slide out of these components.
Mix the ingredients
The next step in the preparation of the cake "Napoleon from Emma's grandmother" will be the combination of prepared ingredients. Why, in the formed slide, it is necessary to make a recess in the center and gradually pour the mixture cooled in the refrigerator into it and mix.
A simple puff pastry needs to be formed quite quickly, but in no case knead, as it will lose its layering. The dough must be raised from the sides to the middle, as if to lay it out in layers and not press firmly. After that, you need to wrap it in film and place it in the refrigerator for eight to ten hours.
Cooking cream
In order to prepare custard for the cake "Napoleon from Emma's grandmother", you need:
- Take an aluminum pan, pour over it with water, and then pour 750 ml of milk.
- Put the pan on the fire and, when the milk becomes hot, pour 225 g of granulated sugar in a thin stream. Do not forget to stir all the time.
- So bring to a boil and turn off the heat.
- Then, in accordance with the recipe for the cake "Napoleon from Emma's Grandmother," you need to combine milk, flour and eggs. To do this, take a suitable bowl, pour 90 g of sifted wheat flour into it and break three chicken eggs.
- Stir with a whisk so that there are no lumps left.
- Then pour 150 milliliters of boiled milk with sugar from the pan and mix well.
- Then pour again 150 ml of milk and mix again.
- Pour the resulting liquid mass from the bowl gently, constantly stirring, into the pan with the remaining milk and sugar.
- Light the tile, bring it to a boil over low heat and cook until the cream thickens, constantly stirring with a whisk all the time.
- After thickening, remove the saucepan from the heat and add 15 g of margarine and half a teaspoon of vanilla sugar. Stir gently and pour into enameled dishes.
Wait until the cream has cooled completely, cover the dishes with a lid and send to cool in the refrigerator.
We make a cake
After the time necessary for cooling the dough has passed, it must be removed from the refrigerator and placed on the tabletop floured with flour. Cut the dough into four parts: three identical and one smaller. The last part after baking will be used as a powder. In order to easily roll out cakes, a table and a rolling pin need to be sprinkled with plenty of flour.
Roll each part of the dough into a layer, the thickness of which should not exceed three to four millimeters, and the size should not be larger than the size of the pan on which it will be baked. It is also important to wet the pan around the edges so that the dough does not begin to rise. Additionally, pierce the rolled dough with a fork.
Placed on a baking sheet, the future cake is sent to the oven preheated to 220 degrees. Cook it for about thirty minutes.
The readiness of the cake is very easy to check. If the cake raised above the edge remains smooth and does not bend, then it has already been baked until ready. Baked cakes should be laid on the table and left until completely cooled. And the one that will be used for powder should be left in the oven for a longer time, so that it turns out to be dark brown.
When the cream and cakes are cooked, it remains only to form a cake out of them:
- Place the first cake on a cutting board and grease with cream.
- Repeat the process with the remaining cakes.
- Grind the crust for sprinkles in a blender with the addition of two tablespoons of powder.
- Decorate the classic cake "Napoleon from Emma's Grandmother" with the resulting mixture.
Leave for soaking for several hours, then refrigerate and serve.
