Cooking Doner Kebab

Shawarma is the Russian name for the Turkish doner kebab dish, which means “wrapped fried meat”. Despite the fact that the Turks came up with this dish, whose name is Mahmut Aygun, Berlin is considered his homeland. It was in one of the restaurants of this city that lamb was first served in garlic sauce with a side dish of french fries and salad. All of these ingredients were wrapped in bread pita.

Mahmut Aygun originally came up with a kebab consisting of meat, rice and salad. But having arrived in Germany, he decided to slightly modify the food, wrapping it in pita bread. This made it possible to create a rather convenient fast food, which is now popular all over the world.

Traditional doner kebab

Ingredients:

  • 400 gr lamb fillet;
  • 1 onion;
  • table. a spoon of tomato paste;
  • milk (2 tablespoons);
  • olive oil;
  • spices, salt.

Cooking

Cut the lamb (200 gr) into thin steaks, beat off a little and transfer to a container. Make minced meat from the rest of the meat. Top the lamb steaks with milk and olive oil, sprinkle with plenty of spices and leave to soak for a couple of hours.

Peel the onion, chop it in a blender and mix with minced meat. Add tomato paste, spices, salt and mix well. In a rectangular shape with high sides, lay a plastic wrap and put meat on it: steaks, then minced meat and again mutton strips. And so a few layers. Cover the top of the doner kebab with plastic wrap, tamp well and place in the freezer for a day.

Heat a little oil in a pan. Cut the doner kebab into thin strips and fry it. Served in a lavash dish with vegetables.

Shawarma in pita bread with chicken

Ingredients:

  • 8 sheets of Armenian pita bread;
  • head of Chinese cabbage;
  • 7 cucumbers;
  • 4 legs;
  • 2 onions;
  • 6 tomatoes;
  • pepper, salt.

For the sauce:

  • 500 gr. sour cream;
  • mustard;
  • ketchup (teaspoon);
  • 6 cloves of garlic.

Shawarma Cooking

Chicken for this dish can be baked in the oven or, separating the meat from the bone, fry in a pan. At the same time, it should be salt, pepper and grease with some kind of marinade (mayonnaise, ketchup, sauce).

All ingredients must be chopped (onions, tomatoes, chicken, cabbage and cucumbers).

Cooking the sauce. Squeezed garlic must be added to sour cream. Mustard, ketchup, salt should be put there. You can add fresh, finely chopped greens to the sauce.

Pita bread is best laid out on a flat surface and evenly grease it with sauce. After that, the prepared filling is placed in layers on the edge of the cake. You can pour sauce in the middle of pita bread, so the dish will be juicier.

We wrap the shawarma in a tube, twisting the edges and crushing the filling, and leave it to soak for a while. Then we cut the roll into parts, heat it in a pan.

Beef Doner Kebab

Ingredients:

  • 300 gr of red and white cabbage;
  • lettuce (100 gr);
  • 4 tomatoes;
  • bulb;
  • cucumber;
  • paprika, pepper, salt;
  • bouillon cube (2 tablespoons);
  • Ekmek bread;
  • fresh beef (300 gr);
  • vegetable oil (5 tablespoons).

Cooking

Thinly cut cabbage and cucumber. Grind the cube and sprinkle shredded vegetables on it. Finely chop the onions, tomatoes and meat. Heat oil in a pan. Fry the meat thoroughly with the onion, season it with salt and paprika. Cut the Turkish bread lengthwise into four equal parts and place it in the oven for a few minutes for it to warm up a little.

When Ekmek is warm, wrap the filling in it and pour in garlic sauce.

Useful Tips

  • When cooking shawarma, pay attention to the freshness of pita bread. If it turns out to be a little stale, then when wrapping the filling, the cake may break. Therefore, it is best to buy freshly baked pita bread.
  • Shawarma goes well with the following sauces: garlic, curry, spicy Turkish, sour cream, mustard-honey.
  • It is recommended to marinate the shawarma meat first, and then fry it in a pan.
