  • 2 calf hearts weighing about 700 grams;
  • packing (200 grams) sour cream;
  • onion head;
  • several branches of parsley or dill;
  • vegetable oil;
  • seasoning, pepper, salt.

How to cook a calf heart? Initially, you need to rinse the meat, cut off all excess veins from it and put it in salted water. It is not necessary to bring the product to readiness, boil it in half. Then cut into thin slices. Heat the oil, fry the onion in it. Once it becomes translucent, lay the heart in the pan. Fry for 5 minutes. If desired, chopped garlic can be added. Pour onion and calf heart into water. The recipe involves extinguishing on a medium-level fire for 20-30 minutes. Salt the finished dish, sprinkle with black pepper. Add sour cream, parsley, simmer another 10 minutes. Remove the stewed heart from the fire and serve. As a side dish, you can cook rice, mashed potatoes or boil cauliflower, and then bake it in breadcrumbs.

To prepare your heart in this way, you need to:

  • a calf heart weighing about half a kilogram;
  • two garlic cloves;
  • Capsicum - 2 pieces;
  • hot pepper - 1 piece;
  • table vinegar - 50 ml;
  • vegetable oil (olive) - an incomplete glass (about 150 grams);
  • 1 lemon and 1 onion;
  • red pepper and salt.

Cut the heart into two halves. Rinse. Remove the veins and cut the meat into cubes. Cook the marinade. To do this, chop the garlic, green capsicum, hot pepper, salt and vinegar. Mix well and fill your heart. Soak it in the marinade for several hours. Then string the pieces onto skewers and bake in a grill pan or in the oven. If you will cook a heart on charcoal, then the skewers should be soaked for several hours in water so that they do not burn out.

Kebab sauce

For a calf’s heart, serve the sauce prepared according to this recipe: in a bowl, mix olive oil, vinegar, red pepper, lemon juice and onion, which is crushed to a mushy state in a blender or on a grater. To obtain a homogeneous substance, it must be stirred only in one direction. Pour the fried heart into the prepared sauce and serve.

Ingredients:

  • a pound of calf heart;
  • 2 medium sized tomatoes;
  • bell pepper - 1 piece (about 150 grams);
  • tomato juice - an incomplete glass (about 150 ml);
  • mustard seeds ;
  • coriander seeds, peppercorns, lavrushka;
  • onion head;
  • buckwheat - about 400 grams (2 cups);
  • water and salt.

Cooking technology

Cut the onion into pieces of any size and fry in oil. Slice the tomatoes and peppers, put to the onion. Spasseruyte 2-3 minutes. Cut the heart into slices, lay to the vegetables. Sprinkle with pepper and salt. Season with a spoonful of mustard seeds, coriander, a few peas of pepper. Shuffle. Stew meat for 10 minutes. After pour tomato juice and water (it should cover the heart by 4 centimeters). Lay the parsley and simmer for 40 minutes. Time is up - evaluate the dish for salt. Add water if necessary. Boil buckwheat separately until tender. Serve together, a little sprinkled with a dish of herbs.
