Traditional French Quiche Recipe

For the filling, you need to take two hundred grams of smoked salmon fillet, three eggs, three quarters of a glass of fat cream, a glass of milk and one hundred and fifty grams of grated cheese. Smoked salmon is cut into small pieces, placed in a mold from the dough, and on top pour a mixture of eggs, cream, milk and half a portion of grated cheese, well beaten in a mixer. For piquancy, you can add a little grated nutmeg to the mixture and, of course, do not forget to salt it (if the cheese is salty, then you should take very little salt). Sprinkle with a layer of the remaining cheese on top and set to bake at medium temperature for 40 minutes.

Quiche with bacon and asparagus recipe

One of the most classic French pies is an open quiche with asparagus and bacon. For the filling, asparagus is boiled for four to five minutes in slightly salted water, then the tops are cut off from it, and the stalks are chopped in small pieces. Grated cheese, pieces of asparagus are added to the whipped egg-milk mixture , everything is poured into a mold from the dough, heads of asparagus are laid out on top of the whole surface, sprinkled with cheese and baked. Thin strips of bacon fried to a golden crust are spread on the surface of the finished cake and pour it with melted fat.

For the filling of onion quiche take a mixture of chopped onions and leeks, fried in vegetable oil. Grated soft cheese with a sharp taste and two well-beaten eggs are added to the onion mixture. The filling is laid out in a form from the dough, put in the oven and baked until half cooked. Then a mixture of grated hard cheese with chopped dill is spread on top of the pie and again placed in the oven for 20 minutes until the surface of the pie is covered with a crispy golden crust.

Cooking a sweet shortcrust pastry. In the above recipe you need to add one hundred grams of sugar. Put the pitted cherries into the mold from the dough (it can be thawed or canned) and fill it with sauce from a glass of whipped sour cream, one egg, one glass of sugar and two tablespoons of flour. Bake the cake for 40 minutes, let it cool and carefully remove from the mold. Instead of cherries, you can use any other berries and fruits.
