To do this, they need to be rinsed with boiling water and only then remove the dark skin and colorless film. The purified product is placed strictly in boiling salted water and cooked for no more than three minutes, otherwise the meat will be stiff and lose its taste. Ingredients: half a kilogram of squid, lemon, half a tablespoon of chili pepper, fifty grams of oil, a clove of garlic, dill and parsley, salt.
Squeeze the juice from the lemon and rub the zest into it, adding finely chopped pepper, salt, garlic and a little olia. Fried squid is poured with marinade, add greens. Everything is mixed and left for twenty minutes, after which the dish will be completely prepared.
3. Squids (recipes from Beijing).
Ingredients: three hundred grams of squid, half a liter of vegetable oil, ten grams of ginger, a head of garlic, one onion, one spoonful of salt, starch and cognac, fifty grams of broth and twenty grams of fresh cucumbers.
The peeled squids are cut into two strips, on which deep cuts are made every few centimeters. After this, more incisions are made so that pieces of a rectangular shape are obtained, which must be dipped in boiling salted water and taken out when they are wrapped and fried in oil.
Meanwhile, seasoning is added to the hot oil, made from finely chopped onions, garlic, ginger, cognac, broth, sliced cucumbers, starch and salt, bring everything to a boil, lower the squid pieces and immediately take them out.
2. Jam squids (recipes for festive dishes).
Ingredients: one glass of squid, chopped into strips, two glasses of jelly, carrots, ten olives, half a lemon, ten branches of greenery.
In the prepared forms, you need to put a little jelly, chopped olives, one slice of lemon, several branches of greens. On top of all this, squids are stacked, combined with slices of carrots, all this is filled with jelly and put in a cool place to freeze. Before serving, the forms are dipped in hot water and immediately turned over in order for the product to be laid on a dish.
