Sour milk: a recipe for cooking, sweets in sour milk

I often spent the summer holidays in the village with my grandmother. In addition to clean air, the lack of which is clearly felt in the city, I was delighted with the amazing grandmother’s cottage cheese, tastier than I have never met anywhere else.

There I became addicted to sour milk. Visiting my grandmother, instead of sour cream, I only dressed salads with sour milk. Believe me, this is incredibly tasty (and useful!), However, such a replacement of sour cream terrified my friends, who, however, gladly ate sweets cooked in sour milk.

Sour milk: recipe

Years passed and I rarely visit the village, but sometimes I feel like wanting to try grandmother’s cottage cheese again and make a salad with sour milk! Therefore, you have to improvise a little to make sour milk at home. Want to know how to make sour milk   at home? Actually simpler than simple: in an enameled bowl, bring the milk (three liters) to the boiling point (but do not boil!) And set to cool. When the temperature of the milk reaches 40 (38) degrees, we put in the pan the contents of a 250-gram jar of sour cream, purchased at the store, but do not mix. After 24 hours, mix the contents of the pan, the sour milk is ready.

If you are going to cook the next portion, you can use the same recipe, replacing sour cream with sour milk (250 grams).

I saw an article on the Internet that told how to make sour milk at home. The recipe is almost identical to mine, but after the milk boils, three tablespoons of sour milk are added to it, and then the pan goes to the preheated oven. So, apparently, sour milk is preparing faster, but personally, I prefer my own, proven method. Another way to make sour milk at home is to add bread crust (vinegar, citric acid) to fresh milk and heat it.

Spoiled milk. Bakery products

Most people value sour milk as the basis for natural yogurt, and for good reason. It develops a Bulgarian stick, which makes yogurt natural. It is no secret that the yoghurts that are on the shelves of the stores can hardly be called natural products that do not contain preservatives or chemical constituents.

In addition, you can cook cottage cheese, delicious pancakes, pies on sour milk. As mentioned above, on the basis of this product you can cook many delicious dishes. Sweets are excellent! I offer you several recipes from my culinary piggy bank.

Homemade buns

Components: a glass of sour milk, two glasses of flour, a baking powder - about 2 teaspoons, 120 grams of cold butter.

Cooking. Pour flour into a deep bowl, pre-mixed with baking powder. Add butter to flour and chop it in a bowl with flour. Then make a depression in the flour, into which sour milk is poured. Knead the dough and spread it on the floured surface of the table. With a sharp knife or a special form, make circles (future buns) and transfer them to a baking sheet. Send the baking sheet to the oven heated to 230 degrees, bake rolls for about 20 minutes.

You can serve such rolls with jam or melted chocolate.

Sour milk fruit pie

Components: a glass of sugar, two eggs, a teaspoon of soda, a glass of sour milk, two glasses of flour, a packet of vanilla sugar, fruits.

Cooking. Mix sugar and eggs thoroughly, pour sour milk into this mixture, into which soda is added. Mix well, combine with flour and vanilla sugar and mix again. The dough should eventually become liquid.

In a greased (creamy) form, put fruit on the bottom, pour the dough on top. Cook for half an hour at a temperature of about 180 degrees (the oven should be hot when a form is placed in it).

What else can you cook using sour milk? The muffin recipe will surely appeal to the sweet tooth. So, muffins in sour milk.

Ingredients: sour milk (225 ml), flour (300 g), small apples (2 pcs.), Sugar (100 g), one egg, baking powder and vanilla essence (2 tsp each), vegetable oil (60 ml ), salt (½ tsp), topping: cinnamon and sugar (1 tsp each).

Cooking. Cut the apples into small cubes, chop the nuts coarsely. In a large deep bowl, mix the flour with salt, baking powder and sugar. In a separate bowl, beat the egg, combine it with vegetable oil, sour milk and vanilla essence. Pour the resulting mixture into a bowl and mix the ingredients until smooth. Add chopped nuts and apple slices, mix.

Fill the molds with dough (approximately 2/3, as the dough will rise during the cooking process) and sprinkle with sugar and cinnamon. Cook for 20 minutes in a heated oven (180 degrees).

Sour milk donuts

Components: flour (1 kg), sour milk (500 ml), eggs (3 pcs.), Water (250 ml), yeast (10 g), powdered sugar, vegetable oil (500 ml), salt to taste.

Cooking. Beat eggs with milk, combine with water and yeast dissolved in it. Pour all this into flour, knead soft dough and leave for an hour. After 60 minutes, roll the dough into a thin layer and cut out round cakes. Fry in vegetable oil until golden brown, sprinkle with powdered sugar and serve.
