Choux pastry - a treat familiar from childhood

A custard cake or eclair is a tender pastry and a sweet filling. His taste has been familiar to everyone since childhood. But even in the preparation of this delicacy there are subtleties. Badly brewed dough will not be so tender and cakes will not work. So let's talk about how to cook this dessert.

The name "eclair" came to us from the French language. To prepare custard cakes with cream, you need to make a blank. How airy the dough will turn out, the eclairs will be so tasty. The amount of ingredients for cooking is minimal.

First, take a glass of water and pour it into the pan. We are waiting for the water to boil. Then add 100 grams of butter. It can be taken out of the refrigerator beforehand so that it is soft. When the oil has dissolved, gradually introduce one glass of flour. Sift the flour through a sieve. Then it will be saturated with oxygen and the dough will turn out more airy. In the process of adding flour, you need to constantly mix the dough. It must be homogeneous. Boil it a little. When the dough does not stick to the walls of the pan and turns into one big lump, then it is ready. Turn off the heat and leave the dough to cool.

Then we drive five eggs into it. We do it gradually, kneading it well. Typically, a custard cake has a classic elongated shape. But if you wish, you can make it in the form of a ring or a ball. Take a pastry bag or syringe. We fill it with dough and squeeze out cakes of arbitrary shape on a baking sheet. On a baking sheet you need to lay the parchment and grease it with oil. Please note that the custard cake in the baking process increases in size. Therefore, lay out the lumps of dough at a certain distance from each other. We preheat the oven chamber to 200 degrees. When the custard cakes become rosy and increase in volume, you need to reduce the temperature to 170-180 degrees. Then we bring them to full readiness.

We take them out of the oven and let cool. Now you need to prepare the cream. Choux pastry goes well with almost any cream. You can take protein, oil or custard.

To make custard, you need to take a glass of milk and mix it with two eggs and three tablespoons of flour. For convenience, you first need to dilute the flour in a small amount of milk. But even if lumps remain in this combination. Do not worry, they will disappear in the process of further preparation. Now we take another glass of milk and mix it with a glass of granulated sugar. Bring this mixture to a boil over low heat. Next, mix these ingredients with the first cooked mixture. At the same time, stir constantly so that the flour does not burn, and the cream turns out to be homogeneous. When the contents of the pan boil, turn off the heat, but do not stop disturbing for another 2-3 minutes. After the cream has cooled, add 100-150 grams of butter to it and beat well with a mixer. The cream is ready.

But how to make another cream. We take 600 milliliters of cream, the fat content of which should be at least 30 percent. Add to them about 9 tablespoons of powdered sugar and a teaspoon of vanilla sugar. Then, thoroughly beat all the ingredients with a mixer. Cream for the cakes is ready.

We make an incision on each cake and fill them with cream. You can use a confectionery syringe and start using it. Alternatively, you can cut off the top of the cake and put the filling inside. The custard cake can be coated with chocolate icing on top.

The custard cake after baking should be airy and empty inside. And you can do this only by observing all of the above requirements.
