For the filling, you need two tablespoons of sour cream and a pound of suluguni cheese. Its mixture with cheese is also suitable. You also need one chicken egg for lubrication.

Megrelian Khachapuri

This delicacy is being prepared in a slightly different way than Imeretian khachapuri. His recipe, however, is equally clear and simple. The actions are as follows:

  • In a container, part of the flour (200 g) should be sieved, and yeast, sugar and salt should also be added. Mix.
  • Boil the milk. Throw butter in it, allow to melt. Wait until the milk-butter mixture cools to 35 ° C.
  • Pour the flour mass with this composition.
  • Quickly mix the components with a whisk. You should get a uniform viscous texture. Of course, without lumps.
  • Add refined oil, mix.
  • Knead the resulting mass manually. The dough should not turn out very thick, but it will lag behind the hands. Then put it in a clean bowl. It should be warm for 1 hour.

After that you need to do the main thing - the contents of future baking. Cheese through a coarse grater (set aside a few spoons for sprinkling) and mix with sour cream. You can add it if the filling seems fresh.

Divide the approached dough into quarters. Turn each of them into a thin layer. In the middle of each lay the cheese mass. Then tighten the edges and connect. The shape will resemble a “bag”. The edges can be cut.

Roll out all the "bags", turning them into a cake. Spread with beaten egg, sprinkle with cheese. Send to the oven, preheated to 220 ° C for twenty minutes. You can serve! This pastry does not need to be greased with oil, like Imeretian khachapuri.
