There is even a joke among cooks that he would become a famous 19th-century deli if he didn’t have time to become famous as a composer.

Rossini's cocktail was not invented by him at all. It appeared only in the middle of the 20th century and was first tested in Venice, in the famous Harry's Bar. The low-alcohol mix was named in honor of the composer as a fan of his talents - both musical and culinary.

You need to cook it with love and by all the rules. At least as a sign of respect to the composer, with such trepidation related to cooking. The first step to getting a drink is to make strawberry puree. Fresh berries, at the rate of 75 grams per glass, are washed, filtered through a colander and blotted with a paper towel. An air gruel is made of them with the addition of a few drops of lemon juice, which is put in the cold for at least an hour. If strawberries are unsweetened, sugar is allowed at the time of juice injection.

Next, the puree is transferred to a tall wine glass and topped with sparkling wine. Ideally, “Spumante Brut”, “Proseko”, “Asti” should be used, but good champagne - semi-dry or brut will not spoil the taste. The volume of wine is about 120 milliliters. The Rossini cocktail is mixed with washing, the edge is decorated with strawberries, you can add ice. Enjoyment is served!

Ways to ruin a cocktail

Even a seemingly simple drink can be completely turned into not too tasty, or even unpleasant. To prevent frustration, do not make two common mistakes. First, leave the shaker aside when preparing a Rossini cocktail. When shaking, the bubbles from the champagne disappear - along with a noticeable part of the taste sensations.

Secondly, use only freshly made strawberry puree. Canned will make your Rossini cocktail, to say the least, nothing. And if you use jam or jam, you’ll get an alcoholic compote, ruining good champagne.

One of the most famous dishes "invented" by the composer has a funny story related to the origin of the name. Being at a dinner in the Parisian Cafe Anglais, reverential in culinary Rossini demanded cooking under his supervision. The cook was forced to cook in the room, which was viewed from the table where the composer was waiting for dinner. Torn out by the quibbles and teachings of the maestro, the chief was indignant, to which he answered him: "Et alors, tournez le dos!" Translated, this means: “If so, turn back.” The last two words and the article gave rise to the name "Tournedo Rossini".

The recipe does not contain anything complicated, but the result is amazing. A little less than half a kilogram of beef fillet is cut across the fibers, salted, pepper and a little beaten.
