Kefir is an ideal product for making dough. Most often it is used for making yeast dough, when there is no time to wait long for ripening.
Now I will explain why kefir dough for baking ripens so quickly. Kefir is a dairy product that is made from fresh milk and kefir fungi or kefir yeast. The composition of kefir yeast includes yeast, they multiply very quickly, so the dough, which contains fiber in the form of flour, quickly ferments. Thus, the dough ripens within half an hour, provided that it stands in a warm place.

1) Pie with apples on kefir. To make the pie we need:
- a package of fresh kefir (it is better to take fatty, so baking on kefir will turn out tastier);
- two apples;
- 3 chicken eggs (quail can be used, they are smaller, so 5 pieces will be required);
- a glass of sugar;
- margarine or butter (one pack will be enough);
- soda on the tip of the spoon;
- premium flour;
- some salt.
Beat eggs, kefir and sugar with a mixer until lush foam. Add softened butter or margarine. Redeem soda, add salt. Enter the flour in small portions until the dough reaches the consistency of thick sour cream. Rinse apples thoroughly, peel and cut into small cubes or small slices. Connect with the dough. Lubricate the cake pan, lay out the dough and bake in the oven to a characteristic crust. Readiness can be checked by a match. Sprinkle the finished baking with powdered sugar, garnish with berries or chocolate chips.
2) It turns out good kefir pie dough. It is being prepared very quickly, which is very handy when acquaintances or friends unexpectedly drop in. For the test, we need one egg, 500 ml of any kefir, slaked soda, salt and flour. Beat eggs, kefir and salt, combine with flour and knead batter. Leave for half an hour to ripen. Then add flour and knead a thick dough. As the filling, you can use any products.
We will prepare the meat filling. To do this, you will need 300 grams of any minced meat (we will take chicken), three large onions, 50 grams of butter so that the filling is not dry, salt and spices. Chop the onion and fry in butter, add minced meat, salt and stew a little. Add spices to the minced meat and mix well. Divide the dough into 10-15 equal parts. Gently roll out each cake, add a tablespoon of the filling, wrap and pinch the edges. Place the pies on a baking tray, pre-oiled, and bake in the oven for half an hour. Hot cakes can replace even a hearty dinner. This dough is suitable for fried pies.
Kefir baking is also good because it does not require much time for cooking. For example, kefir pancakes are cooked very quickly and are very tasty. For pancakes, low-fat ryazhenka or kefir is suitable, as they are served with sour cream. The dough for pancakes is prepared in the same way as for the pies, with only one difference - you need to put less flour to make the dough thin. Ready-made pancakes are served with sour cream, jam, jam or condensed milk. They go well with meat fillings. For example, for the filling, you can grate the sausage, add a little mayonnaise, greens, and the pancakes with sausage filling are ready.
In addition to apple pie, fritters and kefir pies, you can bake amazing cookies, crusts, donuts and buns. Kefir baked goods are lush, tasty and original in taste - with a slight acidity.
