We suggest considering three main options for cooking tomato. Two of them will be using ready-made Chile ketchup, which is easy to get at any more or less large grocery store, the third option is using the chili pepper itself. Choose which one you like best.

Canned tomatoes with chili ketchup. Option one

Essential Ingredients:

  • tomatoes - 700-800 grams;
  • ready-made ketchup "Chile" - 250 grams;
  • one glass of sugar;
  • 150 ml of table vinegar;
  • two to three cloves of garlic;
  • two tablespoons of salt (with a small top);
  • some green dill (you can use umbrellas);
  • water - 1 liter.

Cooking

Garlic needs to be peeled and cut into circles. Dill greens must be washed, dried with paper towels and cut.

In cans, place carefully washed tomatoes without flaws and stalks, as well as prepared garlic and dill. So that the fruits do not crack from boiling water, it is recommended that in each tomato make 2-3 punctures with a toothpick or small incisions with a knife crosswise at its base.

Next, prepare the marinade.

Pour water into a pan, add salt, sugar, ketchup, bring to a boil and completely dissolve the ingredients. After this, pour vinegar and boil again.

Pour marinade into prepared jars. Gently move the cans so that the excess air "stuck" between the components comes out, if necessary, add the marinade to the top and quickly roll up the boiled hot lids.

After this, the cans should be hidden with the covers down and wait for them to cool completely (usually this happens within a day, if the jars are liter and within two days if the jars are three-liter). After that, they can be removed to a place of permanent storage.

Second cooking option

In this recipe, it is more convenient to use large tomatoes, since they will need to be cut.

Essential Ingredients:

  • Tomatoes
  • ready-made ketchup "Chile" about 300 grams;
  • 1/2 cup sugar;
  • 1/2 cup table vinegar;
  • garlic;
  • Bay leaf;
  • allspice peas (to taste);
  • two tablespoons of salt;
  • a little green dill (you can use umbrellas);
  • water - 1 liter.

Cooking

In carefully washed cans, bay leaves, greens and allspice peas are laid at the bottom. Next, fill the jar with a layer of tomatoes, previously cut into two or four parts (depending on the initial size of the tomatoes), each layer on top is sprinkled with spices. Continue to lay in layers (spices, tomatoes) until the jar is full. The final layer should be made of spices.

Next, prepare the marinade. The pan mixes water, sugar, salt, ketchup and vinegar. The mixture is brought to a boil and until the ingredients are completely dissolved, after which it is poured into jars. Roll up and hide in a blanket until it cools completely. After that, the banks are cleaned in the cellar or in the pantry.

Pepper option

This method is incredibly simple, despite the fact that there is no specific recipe. Surprisingly, a fact.

The whole secret is that you can easily cook canned tomatoes with chili by adding hot pepper to your usual tomato recipe for the winter.

That is, you cook according to your favorite recipe, but add a speck there to your taste. As a rule, it is enough to put 3-4 circles of 0.5 cm wide on a liter jar if you use long pods of pepper in cooking, or one tiny peppercorn if you use a small variety. For those who like more sharply, the amount of pepper can be increased by two or even three times.

In all three variants of cooking Chili tomatoes, please note that it is recommended to eat them no earlier than a month after cooking. Otherwise, the tomatoes may not have time to thoroughly marinate.
