Azu
This interesting recipe invented by Tatar culinary specialists is very popular among our hostesses. The dish prepared on it is a very successful combination of meat, spices, fresh and pickled vegetables. This basics can be served not just like that, but also with a rice side dish. To feed your relatives with juicy Tatar pork, you will need:
- 5-7 pickled cucumbers.
- 750 g of pork pulp.
- 150 g of onions.
- 25-30 g of flour.
- 150 g of carrots.
- 30 g of tomato paste.
- 35 g crushed garlic.
- 500 ml of settled water.
- Sugar, salt, lavrushka, a mixture of peppers and vegetable oil.
Having figured out what to cook from pork, you need to understand how to do it. All vegetables are thinly chopped and fried in hot oil, not forgetting to salt and season with spices. After a few minutes, they are poured with tomato paste diluted in 100 ml of sweetened water. Almost immediately, pieces of meat are sent to a common frying pan and simmer all together over low heat. After a quarter of an hour, pork and vegetables are added to the parsley and flour, dissolved in 100 ml of cold water. Then, in the future, the remainder of the liquid is sent. All this is salted to taste and brought to full readiness.
Boiled pork in brine
This pork recipe has been known since time immemorial. To reproduce it, it is desirable to use boneless parts of the carcass, such as a ham or a collar. It produces very juicy and aromatic meat, which can replace purchased sausages. To treat your family and friends with such yummy, you will need:
- 750 g of pork pulp.
- 2 tbsp. l seasoning for meat.
- 1 tsp dried garlic.
Since we will cook pork boiled pork in brine, in addition you will need:
- 1.5 liters of water.
- 2 tbsp. l salt.
- 2 lavrushki.
- 1 tbsp. l Provencal herbs.
You need to start the process with the preparation of the marinade. To do this, the water is boiled with the addition of salt, parsley and Provence herbs, and then cooled to room temperature. Washed meat is immersed in chilled liquid and left overnight. In the morning it is removed from the brine, dipped in paper towels, coated with spices and wrapped in foil. Baked pork pork at 200 degrees for about an hour and a half. They serve it both in hot and in a cooled form.

As a rule, this process takes no more than thirty minutes. Before serving, sprinkle the dish with chopped herbs.
Steak with Lavender and Rosemary
This recipe will certainly not go unnoticed by lovers of spicy herbs. The pork steak made on it goes well with any vegetable side dishes and is ideal for a family dinner. To cook juicy and flavorful meat, you will need:
- 4 pork steaks.
- Β½ tsp. sea ββsalt and black pepper.
- 3 sprigs of dried rosemary and lavender.
- Β½ cup olive oil.
- Zest of one lemon.
Olive oil is combined with dried herbs, brought to a boil and cooled to room temperature. Then, ground pepper, chopped citrus zest and sea salt are added to it. Washed and dried pieces of meat are immersed in the resulting mixture. Twenty minutes later, the marinated pork is sent to a preheated pan and fried on both sides.
Mustard and Caraway Steak
This recipe is probably useful to lovers of not fried, but baked meat. Pork steaks made from it are more dietary and healthy. To prepare such a dish you will need:
- 1 kg of pork collar.
- 4 medium onions.
- 4 cloves of garlic.
- 2 sprigs of thyme.
- 2 lavrushki.
- 1 tsp mustard seeds.
- 1 tbsp. l wine vinegar.
- 1 tsp caraway seeds.
- 1 tbsp. l vegetable oil.
- Sea salt and coarse pepper.
To start playing this recipe for pork, you need to marinate it. To create it, crushed garlic, chopped thyme, mustard seeds, wine vinegar, vegetable oil, salt, lavrushka and ground pepper are combined in one vessel. Onion rings are added to the resulting mixture. After some time, pork steaks and pickled vegetables are laid out in layers in a suitable container. All this is sent to the refrigerator for the whole night. In the morning, the meat is freed from the adhering onions, placed in an oiled baking sheet and baked at 180 degrees for about twenty minutes. Exactly the same steaks can be fried in a pan.
Baked meat with carrots and raisins
Fans of unusual flavor combinations are advised to pay attention to another simple recipe for pork. The meat made on it is incredibly juicy and slightly sweet. To treat your family with a similar dish, you will need:
- 500 g pork tenderloin.
- 2 carrots.
- 30 g of raisins.
- Small onion.
- Salt, ground garlic, spices and olive oil.
A deep longitudinal incision is made in the washed and dried piece of meat. Then it is opened like a book, lightly beaten with a special hammer and sprinkled with salt and spices. Washed raisins and boiled carrots are cooked to the surface of the meat prepared in this way. - 500 g ripe tomatoes.
- 3 cloves of garlic.
- Salt, Italian herbs and olive oil.
Before baking meat in the oven, wash the pork and dry it with paper towels. Then, longitudinal cuts are made in it and tomato circles and garlic plates are inserted there. All this is laid in a form lined with foil and oiled. Then the meat is sprinkled with salt, aromatic Italian herbs and carefully wrapped in an envelope. Washed and dried meat is cut into steaks about one and a half centimeters wide and lightly beaten. Pieces prepared in this way are fried in a heated frying pan, salted and sprinkled with spices. Washed and dried meat is cut into small pieces and fried in an oiled pan. As soon as it is browned, it is transferred to a deep pan. The recipe described below will be a real salvation for busy housewives, who after work need to not only feed their families, but also do a lot of household chores. It allows you to relatively quickly cook a full-fledged dish that does not need an additional side dish. To repeat it, you will need:
- 1.7 kg of pork neck.
- 2 kg of medium-sized potatoes.
- 200 g unsalted lard.
- 5 cloves of garlic.
- Salt, oil and spices (dried dill, red pepper and ground paprika).
In the washed and dried meat, several cuts are made and garlic plates are inserted there. Then it is placed in a deep greased form, covered with slices of bacon and wrapped with quarters of potatoes mixed with salt and spices. All this is tightened with a sheet of foil and sent to the oven. Prepare the neck at a moderate temperature for about two hours. Shortly before completion of the process, the foil is carefully removed from the mold.
