In cooking, there are very interesting names of dishes. For example, julienne. The word is of French origin, meaning thin sliced vegetables julienne for salads or soups. However, over time, only the slicing technology was preserved, in almost many countries they began to call the second dish used as a hot appetizer.
The cooking technology is almost the same. All ingredients should be cut into thin strips, seasoned with sauce, sprinkled with cheese and baked.
For baking, special dishes are used - cocotte. It is a small metal portioned frying pan with a long handle, in which not only julienne is cooked, but also served on the table. A handle is needed to hold the dishes, and in order not to get burned, they put a tube on it - a papillot.
The most popular is cooking julienne with mushrooms. But other options are also no less tasty. For example, they use vegetables, fish and seafood, meat.
How to cook mushrooms julienne ?
Take chicken breast and fresh champignons 50 g per serving, boil separately. Cut both meat and mushrooms into thin strips. Add salt, spices, mix with one tablespoon of sour cream and put in a bowl for julienne - cocotte. Sprinkle one teaspoon of grated cheese on top. Bake in the oven until cheese crust forms.
Another recipe for julienne with mushrooms (you can use not only mushrooms, but also porcini mushrooms, boletus). Half a kilogram of mushrooms cut into slices, boil for 30 minutes, and then fry in oil. Fry 3 onions separately. Then make the sauce. To do this, mix two tablespoons of flour with sour cream (200 g), salt and add half a glass of cold water. Put the onions in mushrooms, pour in sour cream sauce, simmer under a closed lid over low heat, stirring occasionally. Sprinkle with grated cheese (150 g), put in the oven for 5-7 minutes. Readiness is determined by a golden crust.
Seafood Julienne Recipe.
Defrost 200 g of seafood (shrimp, mussels). Prepare the sauce from two tablespoons of flour, fried in a dry pan, with the addition of milk (50 g) and cream (100 g) so that a homogeneous mass without lumps is obtained. Put seafood in coconut baskets, having previously greased the bottom. Onion, finely chopped and fried in oil, also spread on seafood. Pour all the sauce, salt, sprinkle with grated cheese (50 g). Bake in the oven for 10-15 minutes.
Chicken Julienne Recipe.
For cooking, you need 300 g chicken fillet, which you must first fry, and then chop with a thin straw. With mushrooms (100 g) you need to do the same. Mix chicken and mushrooms, pour in sour cream sauce, stew a little (about five minutes), put on coconut mills, greased with butter, and cover with grated cheese. Bake until golden brown.
Recipe for mushroom julienne with squid.
Boil peeled squids for 3 minutes, cool. Thinly sliced mushrooms, fry with onion in vegetable oil. Slice squids, mix with mushrooms. Put fish and mushroom mass in coconut mills, add mayonnaise and sour cream sauce, sprinkle with grated cheese. Bake in the oven until golden brown. Serve, sprinkled with finely chopped herbs.
Chicken stomach julienne recipe.
Rinse the chicken stomachs, boil, cut into thin strips, fry in oil. Finely chop the onion, grate the carrots on a special grater with thin chips. Fry vegetables lightly in butter. Combine the meat mass with the vegetable mass. Make a sauce of flour and sour cream. Arrange chicken stomachs, onions with carrots in coconut dishes, pour sauce. Sprinkle the mass with grated cheese, bake until the cheese crust is formed.
