Next, transfer them to the pan and add all the ingredients according to the recipe, except for lemon juice. - litere of water,
- coriander,
- cinnamon (1/2 tsp),
- cloves (three buds),
- vinegar (three teaspoons per liter of water).
All harvested crops in the forest must be carefully sorted out. We will marinate young and whole mushrooms. You can fry all the rest or make soup with them. We clean the mushrooms and soak in water for a couple of hours, and then thoroughly wash them from sand and needles. Small ones are left intact, and larger ones are cut into several parts.
Next, fill the prepared mushrooms with cold water and send to the fire. Bring the mass to a boil, after which we drain the first water. Pour a new portion and bring to a boil again. Mushrooms should be cooked for approximately thirty minutes, until they settle to the bottom.
In the meantime, we ourselves will be preparing the marinade. Mix sugar, spices, salt and spices. All this is filled with water. We put the pan on the fire and bring the liquid to a boil. The marinade must be boiled for three minutes and only then add vinegar. After we turn off the fire.
Next, the mushrooms are laid out in clean jars so that they do not occupy more than 2/3 of the volume. Then fill them with marinade, not forgetting to add all the spices and spices. We close the jars with lids and wrap them in a warm blanket before cooling. Then store in a cool place.
Instant mushrooms
This recipe is useful to every housewife. Thanks to him, you can cook pickled mushrooms in the shortest possible time. This is very convenient, since such gifts of the forest can later be used to prepare various dishes and salads. Crispy mushrooms are very tasty.
If you want to cook a snack, then you just need to buy 0.5 kilograms of champignons. If you plan to make mushroom salad, then you should take at least a kilogram of mushrooms. The following amount of spices is indicated specifically for a kilogram of products:
- salt (35 g)
- sugar (25 g)
- allspice (15 pcs.),
- cloves (8 pcs.),
- bay leaf (5 pcs.),
- garlic (8 cloves),
- bow,
- ground coriander (tsp),
- wine vinegar (110 ml).
For marinade, you can use the most common vinegar. But then its amount must be reduced to 70 ml, so that the finished product is not too acidic.
We clean the onion, chop and pour vinegar. Wash the mushrooms and cut into pieces if it was not possible to get small mushrooms. Now proceed to the preparation of the marinade. Pour a liter of liquid into the pan and bring it to a boil, add all seasonings, except vinegar, garlic and onions. We are waiting for the complete dissolution of sugar and salt.
Transfer the mushrooms into the resulting marinade and cook for about ten minutes under the lid. It may seem to you that there is very little liquid, but very quickly the champignons release the juice, and therefore they are completely covered with marinade.
We cut the garlic into slices and add it to the prepared mushrooms along with vinegar and onions. Turn off the fire, mix the entire contents of the pan and close it with a lid on top. Chilli and dill can also be added for pungency, which will add flavor to the dish. After cooling, the champignons are transferred to clean jars and pour the marinade. We seal the containers and put them in the refrigerator, in the morning mushrooms can be served on the table.
The recipe is good in that it allows you to quickly cook a great snack. However, this option is not suitable as a preparation for the winter, since pickled mushrooms can stand in the refrigerator for only a couple of weeks.
Mushrooms in six hours
This recipe also relates to quick cooking options for pickled mushrooms. A delicious snack is ready to eat in just six hours.
Ingredients:
- garlic,
- champignons (570 g),
- vegetable oil (55 g),
- pepper (six peas),
- vinegar (two tablespoons),
- tsp salt

Let's start cooking with the marinade. Pour water into the pan, add all the spices and bring to a boil, then cook for five minutes. Pour sugar and salt into the boiling liquid, stir until dissolved. Next, pour the vegetable oil and vinegar.
Wash the champignons and dip them into the boiling marinade, after boiling them for five to six minutes. Then turn off the fire and leave the mushrooms to cool in the liquid. After some time, the champignons can be laid out in jars and pour the marinade. We set the blank for six hours in a cold place, after which it can be served on the table. When serving, you can decorate the mushrooms with green onions and herbs. They turn out very tasty - moderately salty and spicy.
