But usually it is served with a salad under the original name Chuka, because it is with it that he can fully reveal all the shades of his taste. For cooking, you need to choose only the lightest - this means that they are fresh. You can, of course, use the old ones (since they have already lost moisture), but they may turn out to be rancid.

Necessary products - spices: saffron, red pepper, unzo suneli (spice, it is blue fenugreek), coriander, salt; 3 salt spoons of hot meat broth, wine vinegar (but you can replace it with dry white wine if you wish), a few drops of peanut butter, garlic (a few heads).

Sort walnuts and pass through the smallest grinder of the meat grinder (you can even grind it on a coffee grinder). A few (pieces 2 - 3) heads of garlic to peel and then pass through the press, you can use a special garlic press. Mix all of the above spices with each other. Mix nuts and spices and add a few tablespoons of hot meat broth to them, then grind thoroughly. Then, continuing to grind nuts and spices, carefully pour in wine vinegar or the wine itself. Wine or vinegar needs so much that the consistency of the resulting mass was like a pancake batter. Put on fire, bring to a boil, but in no case boil. When serving, drip a few drops of peanut butter. The result was a very delicious walnut sauce.
