Potato casserole with meat requires the right approach to cooking vegetables. Potatoes need to be boiled in a "uniform". Only with this method of heat treatment does starch remain in it, which is necessary for this dish. After cooking, the potatoes must be completely cooled, then peeled. To grind you need a meat grinder. Of course, you can use the usual pusher, but after it there are many lumps that can ruin the impression of the dish. After chopping the potatoes, add sour cream and eggs to it. Mix well until smooth. To do this, it is better to use your own hand or fork. Ultimately, you get a mass that looks like dough.
How to make potato casserole using prepared ingredients? Lubricate the baking dish with melted butter. And sprinkle its bottom with breadcrumbs. Now wet your hands with cool water so that when you form the potato mass, it does not stick to the skin. Use half the potatoes for the bottom layer of the casserole. Level it at the bottom, pay special attention to the walls of the pan, they should not be infused with potatoes. On the contrary, a thinner layer is needed at the very edges. Next is a layer of meat filling. Stuffing should be well aligned. The top layer is constructed from the remains of potato mass. To do this, you need to wet your hands again if you will form a layer without additional devices. Be sure to apply sour cream on top. It will give the casserole an even more delicate taste. Alternatively, you can make a sauce of porcini mushrooms, in case you are serving a meal at the festive table. For the sauce you will need: porcini mushrooms - 500 g, cream - 200 g, butter - 70 g, salt and pepper. Rinse mushrooms, chop finely. Fry them in a pan greased with butter. Then salt them and pepper. Next, pour in the cream and mix. Sauce for another 10 minutes over low heat. Now pour the sauce into a container and serve to the casserole.
