So the time has come for purple cabbage. Everyone knows that this vegetable is considered very useful because it is rich in vitamins. Also purple cabbage contains enzymes, proteins, volatile, fiber. The benefits that this vegetable brings to the human body can be discussed for a very long time. But we suggest that you familiarize yourself with several recipes for its preparation.
Recipe number 1. Braised
Purple cabbage, the recipes for which are different, after heat treatment loses its beauty. Nevertheless, it is consumed in a stew. So, we need:
- two red onions;
- three tbsp. l wine vinegar (red);
- 8 clove buds;
- two tbsp. l butter;
- a pinch of cumin;
- salt to taste;
- a kilo of red cabbage;
- one tbsp. l Sahara;
- A bunch of green onions.
First, peel and finely chop the onions. Take a pot with a thick bottom, melt the butter, fry the onion for 5 minutes. Add sugar, cloves, cumin, vinegar. Cook for 3-4 minutes, stirring so that the sugar dissolves.
We remove the upper leaves from the cabbage, wash, finely chop. Put in a pan with onions, cover, cook for one hour over low heat, stirring occasionally. Season with pepper and salt to taste. Finely chop the washed green onions. When serving, sprinkle cabbage with green onions.

- 1.5 l of vegetable broth;
- 200 g of red cabbage ;
- 2-3 pcs. medium potatoes;
- 50 g mayonnaise;
- 40 g of tomato paste;

We prepare cabbage soup as follows. Well wash the potatoes, peel, cut. We wash the purple cabbage, chop it very finely. Bring the broth to a boil, add the potatoes. Recipe number 3. Salad
We offer you to cook purple cabbage salad, its recipe is very simple. We take:
- red cabbage - 300 g;
- fresh carrot (medium) - one pc.;
- onions - one pc.;
- fresh tomatoes - two;
- bell pepper - two pcs.;
- greens - to taste;
- black pepper (ground), salt, sugar - to taste;
- cold boiled water - 1/4 l;
- table vinegar 9% - to taste;
- vegetable oil - five tbsp. l
The cooking process is this. Purple cabbage is thinly chopped. Wash the pepper, peel the seeds, cut into thin strips. Wash the tomatoes, dry. We cut into thin plates. Peel the onion and cut into half rings. We clean the carrots, three on a grater (medium).

- purple cabbage - kilo (shredded);
- four tsp fine salt;
- two peas of allspice;
- one or two peas of black pepper;
- one bay leaf;
- four tsp Sahara;
- one tbsp. l vinegar essence.
For pickling, choose tight heads of cabbage. We clean the cabbage, shred with a thin straw. Weigh the amount of chopped cabbage, add salt (for 1 kg two tbsp. L.). Mix in a large container, leave for two to three hours. During this time, cabbage will secrete juice and become soft. We put it in jars with spices: black and allspice and bay leaf.
We prepare the marinade as follows: boil water, dissolve salt (two tbsp.), Sugar (four tsp.), Vinegar essence (one tbsp.) In it. All this per liter of water. Cool. Fill the jar filled with cabbage with the cooled marinade, cover with lids, pasteurize. 20 minutes a half-liter can, 30 minutes - a liter, 50 minutes - a three-liter, from the moment the water temperature is 85 degrees.

We take:
- three kilos of cabbage;

- five tbsp. l salts;
- one tbsp. wine (apple) vinegar;
- 10 pieces. peppercorns black pepper;
- 15-20 pcs. peas of allspice;
- five pieces bay leaf;
- 10 buds of cloves;
- 3-3.5 Art. water.
Purple cabbage for winter with plums is easy to prepare. Wash the plums, cut in half, remove the stone. Remove the external leaves from the cabbage, chop it with a thin straw. Sprinkle with salt, slightly crush hands.
We prepare the marinade: add sugar and spices to the water, put on fire, let it boil, boil for 10 minutes. Remove from heat, add vinegar, mix.
