Traditional zrazy, as a national dish of Lithuanian, Polish, Ukrainian and Belarusian cuisine, is prepared from minced minced meat stuffed with vegetables, mushrooms or eggs. No mashed potatoes were mentioned in the original recipe. And the changes in the cooking technology, apparently, were made by the poor, who simply could not afford meat. The choice of filling options has also become much wider.
Today, this dish is also served in restaurants. And how to cook at home potato zrazy and what fillings are for them, we will tell in our article.
Potato dough for zraz
There are many filling options for this traditional Slavic dish. Inside the potato patty you can put anything you like: minced meat, mushrooms with onions, boiled eggs, herbs, vegetables. And even with sausages, the zrazy will turn out to be terribly tasty. But as a basis, mashed potatoes are always used, prepared in the following way:
- Wash the potatoes (1 kg), peel, cut into large pieces and put in a pan. Pour water to the top and put on medium heat.
- As soon as the potatoes boil, salt it. Simmer until cooked.
- After 20 minutes, drain the water. Mash the potatoes with a mortar, pepper and cool at room temperature.
- Insert 1 egg into the cooled potato. Add 50 g flour. Mix mashed potatoes well. It should turn out to be thick enough to make it convenient to work with. Do not add too much flour. Otherwise, the zrazy will turn out rubber.
How to properly wrap the filling
Making mashed potatoes for zrazy is only half the battle. It is equally important to learn how to properly form products so that they do not fall apart when frying. But first you need to decide what kind of filling to make potato zrazy. Here are the most popular options:
- minced meat (pork, beef, chicken);
- mushrooms;
- boiled egg with green onions;
- fried cabbage;
- fish;
- liver and offal;
- sausages;
- prunes with garlic;
- vegetables;
- cheese.
A prerequisite - the filling should not be too wet.
To make zrazy, you need to put a small amount of minced potato on a table dusted with flour and flatten into a cake. Put a tablespoon of the filling inside. Raise the edges of the tortillas and form a patty with your hands. Use the wide side of the knife or palm to flatten it. Roll zrazy in flour or breadcrumbs on all sides. Fry the semi-finished products in a pan with vegetable oil until golden brown, first on one side and then on the other.
Potato zraz meat recipe with minced meat
For this recipe, pork and beef, and chicken, and even turkey are suitable. The meat must be passed through a meat grinder to get minced meat. Well, then you can start cooking meat fillings:
- Finely chop 1 onion with a knife and grate the carrots.
- Fry vegetables in vegetable oil (2 tbsp. L.) For 3 minutes.
- Put the minced meat in a pan and fry it until tender, along with onions and carrots. At the very end of the cooking season with salt and pepper.
- Cool the filling, then use for stuffing the mashed potato cakes.
- Fry potato zrazy with meat filling in vegetable oil and serve with sour cream. The dish can be stored in the refrigerator for up to two days, and before serving, heat in the microwave.
Sausage stuffing
The following dish is especially honored by children. As a filling for potato zrazy sausages are taken, and they do not need to be crushed to the state of mincemeat. Preparing such a dish is as easy as shelling pears:
- Cook the potatoes and make mashed potatoes from it. Use only a potato masher, but not a blender. Otherwise, the mashed potatoes will be too viscous. Add the egg and flour to it.
- Pre-cook small sausages or lightly fry them in a pan.
- Make a ball of mashed potatoes and flatten it in the palm of your hand to make a cake. In the center, put a sausage, and then form a patty out of the cake. Bread it in breadcrumbs or in flour.
- Fry zrazy in warmed vegetable oil until browning on top.
Zrazy can be served both in hot and in cold form for a side dish or take with you for a snack.
Potato zrazy stuffed with mushrooms
When preparing the next dish, wild mushrooms and champignons can be used. It will turn out equally tasty. Only in the first case, the mushroom filling for potato zrazy will be more fragrant. Well, cooking such minced meat for potato dough is as easy as shelling pears:
- Finely chop mushrooms (300 g).
- Chop the onion (2-3 pcs.).
- Fry it in vegetable oil (3 tbsp. L.) Until a pleasant golden color.
- Put chopped mushrooms in a pan to the onion. Fry them for 2-3 minutes over medium heat. After that, cover the pan with a lid, reduce heating to a minimum and continue cooking until the liquid has completely evaporated. At the very end, add salt and pepper.
- Cool the filling. Put 1 tbsp in potato cakes. l mushrooms with onions. Form elongated cutlets. Fry them in vegetable oil until a delicious crust on top.
Savory zrazy with prunes
The combination of potatoes with prunes is quite unusual. But how delicious are potato zrazy. Prune filling gives the dish a spicy sourness, which is so lacking in potatoes. It is very easy to prepare such zrazy:
- Boil potatoes and make the dough from mashed potatoes, eggs and flour.
- If necessary, remove seeds from prunes. Fold it in a bowl and pour boiling water. Leave on the table for 15 minutes.
- Remove the prunes from the water and put on a paper towel.
- Put dried berries in the center of mashed potato cakes.
- If desired, prunes can be cut with a knife and, for piquancy, add finely chopped garlic to it.
- Fry the zrazy of potatoes with prunes, as usual, in vegetable oil.
Zrazy with liver filling
Liver and potatoes go well together. Many housewives for fried pies choose this particular filling option. In zrazy the same ingredients are used, but they do not mix with each other. Inside each such pie there will be a chopped liver, and outside there is mashed potato. And no fried dough!
Now in more detail about how to prepare potato zrazy with liver filling:
- While the potatoes are being cooked, it's time to start cooking the toppings. To do this, you need onions, carrots, beef liver (300 g), salt and pepper.
- Heat vegetable oil in a pan. Fry on it first chopped onions for 5 minutes, and then carrots, grated on a coarse grater.
- Slices of beef liver to vegetables. Mix.
- Cover the pan and cook the liver for 15 minutes. It is important not to dry the liver so that it remains soft. At the end of cooking add black pepper and salt.
- Cool the liver with vegetables, and then skip the filling through the meat grinder.
- Put the mincemeat inside each tortilla and wrap. Then zrazy can either be frozen, or immediately fry in vegetable oil.
Potato zrazy with fish filling
A very tender filling can be made from pollock fillet. You can use any other fish. Potato zrazy stuffed with minced meat made from salmon and salmon will be very tasty. The whole process can be represented step by step as follows:
- In vegetable oil, spasser first onions, and then carrots.
- Cut pollock fillet (250 g) into small pieces.
- Put the fish in a pan to already soft vegetables. Salt, add lemon pepper or other spices.
- Stirring periodically, cook the filling for 10 minutes. The result should not be very small fish mince with small pieces of pollock. It must be cooled and mixed with dill greens (optional).
- Now the filling can be used as forcemeat for potato cakes, forming elongated meatballs from them.
Stuffing for zraz with spring onions and egg
The next version of mincemeat for zraz is fresh and fragrant in spring. As the filling, green onions, dill and boiled eggs are used. Thus, from the simplest and most affordable ingredients, you can cook a very tasty dish.
To make such a filling for potato zrazy is very simple:
- Put 5-6 raw eggs in a stewpan, pour them with water. Add a tablespoon of salt and vinegar.
- Put the stewpan on medium heat and cook the eggs 10-12 minutes after boiling. Then transfer them to cold water, cool and peel.
- Cut boiled eggs into small cubes.
- Finely chop a bunch of green onions and dill.
- Combine the eggs with herbs, season them with salt and pepper. Stir the filling.
- Use minced egg immediately for making zrazy.
Cheese Zraz Recipe
Below is another option for using the mashed potato left over after dinner, which also allows you to diversify the familiar menu. Hard cheese is used as the filling in this recipe. By the way, there is no need to rub it on a grater or grind it with a cube. Inside a potato pancake, you can immediately put a whole piece (weighing 30-50 g), then the product will be easier to form. Prepare such zrazy as follows:
- Make potato dough by adding 50-70 g flour and 1 egg to the cooled mashed potatoes.
- On a plate, form cakes from it.
- Cheese is cut into thin plates (cubes) a little smaller in size than a tortilla.
- Wrap the cheese in mashed potatoes.
- Roll the prepared zrazy in breading made from flour or crackers and fry in a pan until golden brown on top. Under the influence of high temperature, the cheese will melt inside and the filling will be very juicy.
Fried cabbage zrazy
Sour fillings are ideal for the neutral taste of mashed potatoes. Can be used as minced sauerkraut or fried with the addition of cucumber pickle. It will turn out a very tasty dish for dinner. Potato zrazy stuffed with fried cabbage is prepared as follows:
- Chop white cabbage (500 g) with a knife.
- Finely chop the onion, and grate the carrots.
- Heat vegetable oil in a pan (3 tbsp. L.). Fry onion with carrots on it, and then add cabbage.
- Fry vegetables until cooked. So that the cabbage does not burn, pour a little water as you cook.
- At the very end, pour 100 ml of cucumber pickle or a little vinegar into the pan. Add salt and spices to taste.
- Cool the cabbage filling, then use it as minced meat for zrazy. If desired, it can also be used for fried pies.
Potato zrazy with vegetable filling
If you donβt add an egg to the cooled boiled potato, and prepare the filling exclusively from vegetables, you will get just an excellent lean dish. Such zrazy will help to diversify your table during church fast. They can also be prepared for vegetarians. As with meat filling, potato zrazy with vegetables are no less tasty. The process of their preparation consists of the following steps:
- Onion is fried in vegetable oil, and then grated carrots (2 pcs.). It is recommended to stir fry constantly to prevent vegetables from being burnt.
- When the onions and carrots become soft, send frozen green beans (300 g) to the pan. It should be salted right away.
- Cover the pan and cook the vegetables over low heat for 5 minutes. Optionally, the beans can be pre-boiled for 2 minutes. Then the filling will be softer.
- Stuff the preparations for zraz with vegetable filling, arrange them in the form of cutlets and send them to a pan with hot sunflower oil. Fry quickly until browning on both sides.
Sauce
With different fillings, potato zrazy are equally tasty. To find the perfect mincemeat, it is recommended to try each of the recipes above.
But to serve potato zrazy made with sour cream sauce. To prepare it, you need to mix 200 ml of sour cream with dill and garlic squeezed through a press. Then the ingredients should be salted to taste, pepper and the sauce can be considered ready. Do it immediately before serving.
No less delicious are zrazy with tartar sauce. Pickled cucumbers, which are included in it, are ideally combined to taste with mashed potatoes - the main ingredient of zraz. No less delicious will be the zrazy with tomato sauce cooked with chili peppers.
