Every housewife always has their own signature recipe for the first dish. Someone prefers borscht, someone likes cabbage sauerkraut, someone likes pasta soups. But one of the most popular dishes is pickle. This soup is prepared using pickles and pickle, hence the name. In addition, barley is most often used for cooking. Cooking broth and preparing the main ingredients

Such a soup will be less rich, but also less fat, therefore, high-calorie. This option is suitable for those who monitor their weight or are on a strict diet.
In our recipe we will use meat. Cook the broth for an hour, periodically removing the resulting foam. For half an hour we just cook meat, and then in the broth you can add roots (carrots, celery, onions) and spices (salt, peppercorns).
After the broth is ready, it must be filtered and again poured into the pan. When it cools down, we take apart the meat, separate it from the bones and cut it into small pieces.
Now prepare the main ingredients. Carrots should be grated on a coarse grater, the same thing should be done with pickles. Chop onions smaller, greens - larger. While the potatoes are boiling, we are preparing a standard dressing, as for any other soup. Grated on a coarse grater, mix the carrots in a pan with finely chopped onions, add a little vegetable oil and fry until the onions are transparent.
Pickled cucumbers should be cut into large cubes in the same way as potatoes. Pour the brine into a separate mug. When the potatoes are almost ready, add cabbage to the soup. Cook for another fifteen minutes. Then pour the dressing into it and pour a glass of cucumber pickle. At the final stage of cooking, add pickles to the pickle without pearl barley and meat .

- one hundred grams of coarse salt;
- two tablespoons of table vinegar (9%);
- 250 grams of vegetable oil.
Cooking process
All vegetables should be cut arbitrarily - some people like large cubes, some small cubes. It is better to grate the carrots. Put the prepared vegetables in a large wide pot. Take the dishes a little more, let there be a margin. So it will be easy to mix vegetables during cooking.
Add salt, pepper, vegetable oil to the workpiece. Cook vegetables for ten to twenty minutes, periodically mixing the ingredients. When they are almost ready, add two tablespoons of vinegar and cook for a couple more minutes.
If you decide to make a workpiece with rice or barley, then grits should be cooked separately. Add it should be on a par with vinegar, at the very end of cooking vegetables.
