Hummus recipe: unusual and tasty

Hummus is a traditional dish of Israeli cuisine, gaining popularity in Russia and in other countries. The traditional hummus recipe consists of chickpeas, sesame seeds, herbs, spices, olive oil, garlic and lemon.

A completely unique dish hummus has been known since ancient times. Currently, from the Mediterranean and Middle Eastern countries, the hummus recipe has spread throughout Europe and has flown across the ocean.

This dish is obtained by mixing steamed chickpeas, sesame seeds mixed with sesame oil (sesame paste), garlic, lemon juice, spices and seasonings, so cooking hummus at home usually does not cause problems.

Hummus is very nutritious, contains B vitamins, antioxidants and many plant-based proteins, so the high dietary properties of this product are due to its natural qualities.

You can cook hummus for breakfast - it is almost indispensable. In families where they once met this dish, breakfast is extremely rare without it. As a rule, in the morning the appetite is not very good, and this dish is very tasty and nutritious, so that the hostess, having fed her husband and child in the morning, can be sure that they will not go hungry for a long time. This appetizer goes well with white bread, but you can combine it with pita bread, crackers or even chips - this is what your friends and relatives want.

Hummus may well be served not only for breakfast, but also for lunch and dinner. It emphasizes the taste and aroma of meat dishes, canned and fresh vegetables, it can be served with steaks or barbecue. If you put it in a plate with an even layer, and in the middle - mushrooms or meat (fried or stewed), then there will generally be a real holiday.

However, hummus can be used not only as a snack, but also as a main course. Therefore, in many families this traditional Israeli food enjoys well-deserved love. But in Russia this appetizer is not as widespread as in Europe and the Near and Middle East, it is impossible to buy it in stores, so we will fill up this annoying omission and try to cook hummus on our own, especially since it is simple and does not take too much time.

So, the hummus recipe. For its implementation, the following components will be required: one glass of dried pea chickpeas (can be replaced with ordinary peas, but not quite what you need), soda (optional) - a small pinch for cooking and an incomplete spoon to soak the peas, sesame seeds ground to a pasty state (the so-called tahina) - three or four large spoons, a clove of garlic, a spoon of salt, juice from half the average size of a lemon, half a teaspoon of ground zira, a third of a small spoon of ground hot red pepper, ground coriander - th Werth spoon, half a cup of sesame or olive oil.

Hummus is cooked according to the following “scenario”. Pour the peas with water, add soda and leave to swell for the whole night. After that, you need to rinse it, sort it out again, pour fresh, without soda, water and put it on for another three hours, then rinse it again, pour fresh water and put the peas to cook, adding a small pinch of soda, but you can not add . DO NOT salt the water, otherwise the peas will not soften. Foam must be removed. After boiling, you can cook the chickpeas until cooked (if the dense peel is not removed - in this case it is difficult to obtain a homogeneous mass, but such a dish is much more beneficial for the body), or until half-cooked (if it is planned to peel the chickpea).

It’s better to remove the peel - it will be softer and tastier. Therefore, cook the chickpeas for about an hour, rinse on a sieve with cold water, put it in ice water from the refrigerator and just peel off the peel with your hands. Peeled peas with fresh water and cook for another hour and a half - until tender.

Make mashed peas from boiled peas, leaving a handful to decorate the dish. Add tahina and mix thoroughly. If it is too thick, you can add water from cooking chickpeas. Now the resulting mass of mayonnaise consistency can be seasoned with lemon juice, spices, garlic and salt. Flavoring can be varied depending on taste and individual addictions. After this, add a little olive or sesame oil and mix again.

Before serving, put the hummus on a plate, in the middle make a recess where you want to pour the oil - olive or sesame. Decorate everything with greenery, so it will be not only more beautiful, but also tastier.

Serve with tortillas or pita bread. Fork spoons are not needed here: you just need to scoop up a hummus from a plate with a slice of tortilla and put it in your mouth! It was a hummus recipe. Enjoy your meal!
