Fish connoisseurs prefer whole carcasses, during the cutting of which they will be able to determine the quality of the fish itself: if the cod did not go through the process of repeated freezing, its flesh will be elastic, but if the fish spreads in your hands, it is not recommended to cook it.
To cook cod fillet ( fish baked in the oven ), you will have to defrost the carcass. When cutting the thawed carcass with a sharp knife, separate the ridge and side bones, and then remove the skin. Rinse clean fillet well under running water and dip in milk for half an hour. Dry with a paper towel, salt and make shallow transverse cuts at an angle of 45 degrees. Peel one apple (preferably acidic varieties) and cut it into thin slices. Insert a slice into each incision and drizzle the fillet with olive oil. Oven-baked fish will be good with the addition of potatoes and tomatoes. This stunningly beautiful dish is prepared very quickly and easily. You will need 4 cod fillets, the same number of potato tubers and a couple of tomatoes. Pour a lot of oil into the pot and lower the sliced โโpotatoes. On high heat, he quickly acquires a golden crust, having reduced the flame, we fry the potatoes almost until ready. We spread it on a paper towel, which absorbs excess oil, and add salt. We send the potatoes to the baking dish. Cut the tomatoes into thin slices and cover them with potatoes. We will lay the next layer of fish, which is dipped in the following composition: olive oil, chopped fresh herbs, finely chopped garlic, and then sprinkle with breadcrumbs. Preheat the oven to 180 degrees and send there our form with cod fillet. Fish baked in the oven will be ready in 15 minutes. You will love this combination of fish and vegetables. The dish turns bright, fragrant and very tasty.
And one more recipe for cod (filet in the oven) I really love. It prepares simply and quickly. Directly in a baking dish, the bottom of which is greased with vegetable oil, spread the onion cut into rings. It forms a kind of pillow for fish. I wash the cod fillet in running water, let it drain and salt, after 15 minutes we cut it into portioned pieces, which we put tightly on the onion pillow. Pour it all with either ready-made cream for sauces, or mixed in equal proportions with mayonnaise, sour cream and water. In a preheated oven to 170 degrees, this dish will be cooked for no more than 25 minutes. Both fish and onions, soaked in fish juice mixed with sauce, are obtained - you just lick your fingers!
And of course, one cannot fail to tell about the cod fillet in batter. This dish can be prepared in the most usual way: salt the fish fillet and leave for 20 minutes. During this time, prepare the batter. It can be made on water, on kefir, on beer, but the principle is one - beat two eggs with a pinch of salt, add half a glass of flour and water enough to get a sour cream consistency. The thickness of the batter depends solely on your taste preferences. Slices of salted cod fillet in batter and spread on a heated frying pan. We fry on each side for 7-10 minutes and get a delicious, beautiful fish of golden color. I very often do not cook batter, but dip the fillet in a beaten egg, and then in a plate with sifted flour, then again in the egg and in the pan. It turns out the same batter.
