How to Cook Teriyaki Chicken Deliciously

Teriyaki sauce is a favorite sauce in the Near and Far East. It is added to almost any meat. It is generally recognized that the most delicious dish with its use is chicken in teriyaki sauce. Chicken meat, due to its tenderness, is excellent for marinating in sweet-salty and islet sauce, which emphasizes the taste. According to the Japanese meaning of "teriyaki", sweetness adds honey, salinity - soy sauce, and pungency - pepper.

Previously, when there were no supermarkets, for the teriyaki chicken recipe, the sauce was prepared manually by a chef who had his own recipe with exclusive grams of ingredients, ideally suited to a particular meat or side dish.

Recipe number 1. Chicken Sauce

Since each country in Asia has its own chicken recipe in teriyaki sauce, we will consider the simplest and most classic one. The basis of this recipe:

  • equal slices of chicken fillet;
  • Teriyaki sauce (cooked by hand or bought at the store).

Any vegetables can be added to the base as a side dish, for example onion rings or carrots cut into strips.

Consider the necessary ingredients for a classic recipe. Will need for 1 serving:

  • 1.5-2 kg of chicken fillet;
  • 0.3 tsp ground black pepper;
  • 2-4 tablespoons of wine vinegar (to taste);
  • 2 tablespoons of honey;
  • fresh ginger grated;
  • 1 head of garlic;
  • 2-4 tablespoons of sesame oil;
  • 200 ml of boiled water.

Teriyaki chicken, if you follow all the rules of oriental culinary specialists, is cooked in a wok pan. If it is not in the kitchen, then you need to purchase it. So, you can proceed to cooking. You can divide the cooking process into 3 stages:

  • cooking sauce;
  • pickling meat;
  • roasting.

Let's start with step 1. To prepare the sauce, you will need:

  • Combine and mix the honey and soy sauce until the honey is completely dissolved. If honey is very thick, then to speed up the process, you can put a mixture of soy sauce and honey on the fire for several minutes.
  • Next, pour pepper, vinegar and grated ginger into the honey-soy mixture. The future sauce must be thoroughly mixed and set aside for 10-15 minutes, so that the taste opens and acquires the necessary notes.

While the teriyaki chicken sauce is infused, you can proceed to preparing the meat for marinating:

  • Rinse the chicken fillet thoroughly under water before cutting.
  • Next, you need to dry it with paper towels or wait until the water drains.
  • Washed meat is recommended to cut into small slices of equal shape and size.

When the sauce is infused, you can proceed to marinating chicken meat:

  • The sauce is poured into a deep, wide container. Chicken fillet pieces are dropped there.
  • The minimum pickling time is 2.5-3 hours. The most ideal option would be to place the container with meat and sauce in the refrigerator for a day.

After 3 hours or a day, you can heat the wok and fry the chicken. During the roasting process, it is important to mix the pieces all the time until cooked, gradually adding starch mixed in water. The dish is ready when the meat has acquired a crispy dark golden color. As a side dish use vegetables or rice.

Recipe number 2. Teriyaki Chicken with Vegetables

The best vegetables for this recipe:

  • onion;
  • carrot;
  • green beans;
  • sweet pepper.

Essential Ingredients:

  • 5-6 tablespoons of teriyaki sauce;
  • half chicken breast fillet;
  • 1 PC. carrots;
  • a pair of onions;
  • 3-4 tablespoons of vegetable oil;
  • a handful of sesame seeds to feed.

To reduce the cooking time of teriyaki chicken, you can take ready-made sauce at the supermarket. Chicken fillet must be cut into small pieces (such that it fits in your mouth and it is convenient to eat with chopsticks). The resulting pieces should be poured with sauce and left for a while.

Time depends on the concentration of the sauce: the thicker it is, the less is needed for pickling. While the meat is infused, you can cut the vegetables: carrots into strips, and onions in half rings. But in fact, the shape of vegetables will not affect the taste, so you can cut it as conveniently.

Before frying, it is necessary to heat the wok with oil to a temperature hotter than average, but not to the boiling oil. Onion is fried onions and carrots. This process usually takes one and a half minutes. Once the vegetables are ready, they are removed with a spatula or slotted spoon on a plate. Without turning off the heat and pouring oil, fry the chicken for 3-4 minutes until golden brown. After that we add vegetables and marinade to the chicken and cook until the sauce thickens and caramelizes the chicken pieces. Such a dish is served with rice, and as an independent dish.

Recipe number 3. Teriyaki Chicken with Ginger

To prepare a delicious dish with ginger and chicken, you must have the following ingredients:

  • 4 chicken breasts;
  • 3 tbsp. tablespoons of Japanese sake;
  • 3 tbsp. l sparse soy sauce;
  • 1 teaspoon of sugar (preferably brown);
  • 2 tsp ginger
  • onion - 3 tablespoons;
  • long-grain rice - 2 cups.

Cooking Chicken with Ginger

First, wash the chicken under water and drain it well. Using a culinary hammer, you need to make a chop of fillet about 1 cm thick. In a deep bowl, mix all the ingredients for teriyaki sauce, pour soy sauce and mix until sugar is completely dissolved. Add the meat to the marinade and leave for an hour. After half an hour, you need to turn the fillet on the other side.

While the meat is pickled, you can do rice. It is boiled for 11-13 minutes. After the water is drained, onion and ginger are added to the rice. The pan with rice is covered and set aside.

The meat is put in a preheated pan with oil and fried for 4 minutes on each side, then laid out on a plate. Add the marinade and a third of a glass of water to the oil, bring the mass to a boil and place the chicken there. It is prepared in this form for 5 minutes.

The dish is served with rice and ginger, pieces of chicken fillet are strung on skewers.
