Shish kebab in pita bread: recipes and cooking tips

Few people know the name of the kebab in pita bread. Such a dish is often prepared, and bought more often, but with the name trouble. And he is called barbecue in Kars. And it got its name thanks to the Kars fortress, which for a long time was impregnable, but still fell before the Russian conquerors during the Crimean War.

  1. Mix all the ingredients for the marinade.
  2. Put the meat in the mixture. An important point is how much marinated kebab. It is for this version of the dish that the meat should stay in spices for at least six hours, and it is better to increase the time to eight.

Karski kebab with kidneys

This option is even more simplified. But you can use the marinade from the previous recipe.

Ingredients:

  • One kilogram of lamb pulp.
  • Four mutton kidneys.

Marinade:

  • One onion.
  • One lemon.
  • Pepper and salt optional.
  • Greens to taste.

Cooking method:

  1. The pulp should be well washed, cleaned of films and tendons removed. Be sure to make incisions, then the meat will not tighten during frying. Then divide into portions. The kidneys are also washed and cut each into two equal parts. They must first be soaked. Two hours will be enough.
