To begin with, we define in terms. According to Russian ideas, fries are meat (in our case, fish) fried with potatoes (or subsequently stewed with it). But initially, by this word was meant simply fried meat, without any vegetables. Moreover, it was supposed to fry in such a way that the maximum number of juices did not flow into the pan, but remained in the meat itself. And this does not mean that the chunk was served half-baked - there should not be any blood left in it, only juice.

We turn to recipes that embody our idea of what is fried (from cod or traditional meat). Since we are dealing with fish, the recipe has its own nuances. So, before obligatory frying the gutted and peeled cod will have to be boiled for three minutes. After that, the bones are removed from the carcass, and the meat is rather large cut. In a pan, butter and olive oil are heated (vegetable oil should be a third more). In this mixture, garlic is fried - a couple of cloves, and very quickly. Next, cubes of two large potatoes and a celery root are introduced (based on grams per 800 cod). After a couple of minutes, cod and suitable greens are laid out in a saucepan, and after the same amount, two glasses of milk are poured, salt and favorite spices are poured (combined with fish - this is important), and the dish is stewed for about twenty minutes with medium heating. Then eat on health.
Oven cod roast
It also personifies our ideas about the correct form of such a dish. Itβs just cooked not in a skillet, but in a stove. In fact, the recipes for cod in the oven are much more diverse than those involving non-oven cooking. This is one of them. A kilogram of washed cod fillet is taken and dried - at least with napkins. Chopped portioned, seasoned with salt and pepper. From two chopped onions and two grated carrots, a roasting is done. Eight potatoes are peeled and cut in circles - very thinly, like chips. Next, layers are laid out on the greased baking sheet: the first - from potato kruglyashi, the second - from pieces of fish, the third - from frying. The top is poured with mayonnaise (a tube will go, about 200 ml), and the sheet is put in the oven for half an hour. When the cod roast is ready, it is sprinkled with chopped onion feather and dill.
Baked fish with potatoes
Another cooking option that pleases cod recipes in the oven. The result is not only juicy, but also crispy. It's no secret that crunching attracts a very large number of consumers - otherwise chip makers would go broke. The recipe, in principle, is also a variation on the theme of βcod roastβ. Fish is taken three quarters of a kilogram (omitting the details of gutting). Cut into portions, it is peppered and salted. A pair of bulbs, incised with rings, is stained in oil until golden. Separately, 4 potatoes are browned. Onion frying is placed in a frying pan without a handle (or in a form), the next layer is cod sprinkled with flour, then fries. A sort of "pie" is poured with melted butter and put in the oven. During this time, dressing is cooked up: one and a half glasses of sour cream are mixed with chopped dill. 25 minutes after placing the pan in the oven, the cod roast is poured with sour cream sauce and returned to the place at the same time.
Cod casserole
Also a very tempting recipe. Again, the fish is cut, breaded in flour mixed with salt, and put on hot oil in a skillet. On top of each piece is attached a circle of onions, not taken apart into rings. Fry from below - turn over, sprinkle with grated carrots and put the container in the oven. After ten minutes, the slightly baked fish is poured with a salted and pepper mixture of mayonnaise and sour cream (in proportions that are pleasant to you personally), wrapped in slices of potatoes and put in place. When the tubers are reddened - it's time to convene a family to the table.
