Sour milk pancakes - fast and tasty!

Frankly, for quite some time I could not learn how to make classic pancakes. It would seem, what's so complicated? Make a dash of milk, and as the yeast comes up, add some more flour, an egg, butter, salt, sugar, knead well, give a little more to come - and for yourself, do not spare the butter. Well, I didn’t get these fritters and that’s it! (Either you still need to know some secret, or did something wrong, but, in the end, stopped even trying so that the products do not translate).

But once, when I looked in on a visit to one of my good friends, she immediately led me to drink tea and set surprisingly lush and delicious pancakes on the table, saying that she had baked them just before I arrived. I love pancakes, and how tasty they seemed to me then, that, praising them, I lamented that I apparently didn’t have such ovens.

A friend was surprised and said that she doesn’t do any dough at all, but always prepares her pancakes in sour milk. It often happens that we don’t finish the milk and don’t put it in the fridge on time, it will stand a little at room temperature and begin to ferment - not to pour it out, so it makes these pancakes out of sour milk. (I note that this story happened a long time ago, back in the nineties, then often the inhabitants of suburban villages brought milk and sold it in yards. Of course, it was scary to take it from hand, but still it was empty in the shops, they took it and boiled it). Now there is no problem with dairy, however, milk that is packaged for long-term storage, as a rule, does not ferment itself anymore, but only rancid if it is standing for a long time in an open form.

But if you have the opportunity to buy village milk, then the yogurt from it turns out to be excellent, you can throw a spoon or two of sour cream in the jar in the evening for souring, or add kefir for the same purpose, and drink it in the morning (tasty and healthy), even fritters fritters!

Here is the recipe for sour milk pancakes

We take half a liter of sour milk, 2-3 eggs (if the eggs are large, then two is enough), about one and a half glasses of flour (again I’ll make a reservation, it may take more), 1 teaspoon without top of baking soda (to put out or not is a matter of taste , I put out to beat off the taste of soda, but with quicklime it is often more magnificent), a little salt (1/3 teaspoon) and a couple of tablespoons of sugar.

First, mix the sour milk with egg, salt, gradually pour the flour, not all at once, but stirring (it is desirable that there are no lumps), add sugar and soda, stir well. You can use the mixer at low speeds, but if the mixer is not at hand, then let stand the test for about 10 minutes, mix again. Yes, I add about a tablespoon of vegetable oil to the already kneaded dough and mix again. The dough should not be too liquid, therefore, in order to assess whether there is enough flour, I advise you to always make a “test pancake”: pour a vegetable oil on a well-heated pan, as it hissed - take a tablespoon of the resulting dough and put it in the pan - if it spreads, then liquid, then add flour (maybe a spoon, maybe two, maybe more). It is necessary that the fritters as if immediately “seized” in a hot pan, but at the same time were not too tight (with the right kneading, they would start to rise and swell almost immediately in the pan).

To make fritters well-roasted, rosy, then when frying it is necessary to add oil to the pan from time to time (but not much, it is not necessary that the fritters in that oil float). Frying on one side, we turn it over to the other, ready to remove and put on a napkin so that excess oil is gone, and our pancakes on sour milk were not greasy.

I want to warn that you will get a lot of pancakes from this amount of dough, so I recommend starting with trying to make a batch of 250-300 ml of sour milk, one egg, flour, tablespoons in the eye, salt, sugar, soda, do not forget. Even this amount for a family of 3 people will be more than enough.

Serve your pancakes with sour milk for tea with sour cream, with condensed milk, with jam, with honey, you can make chocolate sauce - there are no options!

When I tried to make them at home, to my surprise, everything worked out the first time. If there is no time to wait for yogurt, then on the finished kefir it turns out very well!
