Chanterelles in sour cream
Chanterelles stewed in sour cream is a classic recipe for making these mushrooms. Such mushrooms are distinguished by their unusual taste and will always be able to decorate your table, whether it is festive or the most everyday.
For cooking you will need:
- chanterelles - 0.5 kg;
- onions - 100 g;
- sour cream - 200 g;
- parsley greens;
- a few peas of black pepper;
- sunflower oil for frying.
Before starting to cook chanterelles in sour cream, they need to be thoroughly washed and cut into pieces you need - these can be either slices or slices. If desired, they can not be cut, but if you cook large mushrooms, then this procedure is simply inevitable. When you cut the chanterelles, put them in a deep frying pan and, pouring salted water up to a third of the volume that they occupy, start cooking under a closed lid. After boiling, wait about 10 minutes and remove the lid. Without reducing the heat, continue the cooking process until the water boils completely.
In the meantime, get ready to fry the onions. To do this, it must be cut into small strips and put in a pre-cooked pan with hot oil. Fry it until a slightly golden crust appears.
While the water evaporates from the pan with mushrooms , add sunflower oil to it and, adding fried onions, continue to fry the resulting mass for another five to seven minutes. Do not forget to regularly mix chanterelles, as they tend to burn.
After the allotted time, reduce the fire of the stove to the minimum and pour mushrooms with sour cream. After that, put the pepper in the pan and, having closed the lid, cook until tender - for seven minutes on a gentle fire.
Before serving, sprinkle the chanterelles with herbs and you can put them on the table.
