Not many people know how to cook stew from vegetables without adding a meat product to it. After all, it is generally accepted that such a dish turns out to be fresh and tasteless. But this is not so. With proper heat treatment and the use of a large number of simple ingredients, this dinner will be so rich and tasty that it can even be served at the festive table.
How to make vegetable stew tasty and fast
Essential Ingredients:
- small young eggplant - 1 pc;
- medium potato tubers - 3 pcs;
- fresh pumpkin - 200 g;
- high fat mayonnaise - 120 g;
- large fresh onions - 2 pcs;
- laurel leaves - 7 pcs;
- black peppercorns - 8 pcs;
- medium carrots - 2 pcs;
- sweet pickled tomatoes - 2 pcs;
- fresh red tomatoes - 3 pcs;
- young zucchini - 1 pc;
- medium garlic - 2 cloves;
- iodized salt - a small spoon;
- white cabbage - 150 g;
- sauerkraut - 4 large spoons;
- dried dill, leek and basil - at will and taste.
Vegetable processing
Before preparing stew from vegetables, all vegetables should be carefully processed. To do this, wash and peel, navels and stalks (if required) the following ingredients: eggplant, potato tubers, pumpkin, onions, carrots, red tomatoes, young zucchini and white cabbage. After that, it is recommended that they be chopped into medium cubes and individually set aside.
Broth cooking process
To understand how to cook stew from vegetables without meat, you need to think about which spices and seasonings will give the dish a greater flavor. We decided to use only natural components for such purposes. Thus, you need to take a large pot, fill it with drinking water for 1/3, boil it, and then put the washed and broken leaves of laurel, black peppercorns,
iodized salt, sauerkraut, dried leek, basil and dill. To make the stewed vegetable stew more saturated, it is also recommended to add salted tomatoes without peel into the broth. All ingredients must be mixed, covered and cook over low heat for about 9-12 minutes.
Formation and heat treatment of dishes
After the broth incorporates the aromas and color of the ingredients, you should proceed to lay out all the prepared vegetables. First of all, it is advisable to place white cabbage in a pan, since it will take the most time to cook it completely. After a quarter of an hour, put the following ingredients in layers with a minimum amount of broth: potatoes, eggplant, carrots, zucchini, onions, pumpkin and tomatoes. Mixing foods is not worth it, but salt and pepper must be necessarily (if desired, you can add a little more water). After that, the surface of the dish needs to be covered with a layer of mayonnaise, covered with a lid and simmer over low heat for about 40 minutes.
Proper serving for dinner
Now you know a simple and quick way to make vegetable stew without using meat. After all the ingredients are soft, the dishes must be removed from the stove, put the grated garlic on the surface of the dish, kept under the lid for another 5 minutes, then put them on serving plates and serve the guests with bread and fresh herbs.
