The dough for this new and tasty snack is prepared according to the usual method of preparation: one glass of water with 150 grams of butter is boiled, you should definitely add a pinch of salt. When the water boils, pour a glass of wheat flour into it, be sure to vigorously stir the mass with a wooden spatula (in no case iron). We turn off the stove fire, but continue to grind the dough until it turns into a beautiful smooth lump that easily lags behind the walls of the dishes. Stir the dough until it cools down to 40 degrees, and then add four eggs one at a time, each time thoroughly mixing the mass until smooth.
Then we transfer the dough into a pastry bag and place small lumps on the baking sheet, with a diameter of not more than three centimeters. We bake in the oven for twenty minutes at a temperature of 200 degrees, while the oven door should not be opened ahead of time - the dough will settle, and profiteroles will lose their air structure.
The filler can be prepared from 200 grams of cream cheese (you can make a more expensive option - take cream) and the same amount of salmon fillet: smoked or salted, which we cut into small pieces. Mix fish and grated cheese, add one bunch of finely chopped fresh dill and mix. When the baked profiteroles are completely cooled, we cut off the top with a sharp knife and fill them with the filling. Put the lid on top so that the filling looks a little.
A new look at Olivier
Olivier salad, which has already become traditional on New Year's Eve, can be prepared in several new ways: for example, serve portionwise in glasses, laid out in layers. Moreover, we prepare the salad Olivier with tongue (beef or pork) - this will give the dish a completely new unique taste, after which this New Year's dish with boiled chicken or sausage will seem fresh.
For cooking for every 350 grams of language you will need:
- one each: onion, boiled carrots and potatoes, fresh cucumber;

A healthy attitude towards food and life has long turned many people to veganism - the animal rights movement. These people do not eat animal products, as well as seafood, so if you are waiting for a vegan, you should worry about a couple of dishes for him to show respect, and also so that the person does not feel “out of place”.
Salads and snacks on the festive table in this style are always distinguished by the simplicity of preparation and a certain minimalism, which makes them honor. Required Products:

- Two fresh cucumbers.
- 200 grams of salami.
- 2-3 fresh tomatoes.

The combination of juicy meat and aromatic oriental spices will add variety to the New Year's table, and the presence of greens and vegetables will reduce the burden on the digestive system. We procure products:
- Head of Beijing cabbage.
- 400 grams of beef tenderloin.
- Two fresh cucumbers and bell peppers each.
- Half a head of garlic.

Cut sweet pepper into thin strips, grate the cucumber for Korean carrots, and tear up Beijing cabbage in large pieces, put everything in a salad bowl. Chili pepper cut very thinly and add to the salad. In a pan, warm the sesame seeds until golden brown and set aside, warm the oil and pour the pickled meat into it, peeled off pieces of garlic and other things. Make the fire maximum and fry the meat on it for 8-10 minutes, and then pour on the vegetables together with the juice that has formed, sprinkle with sesame seeds and mix. Three minutes later, serve. Seafood salads

- Neptune salad slightly resembles the previous one, although it has more marine ingredients: 300 grams of boiled shrimp, crab sticks and squid, five eggs and 120 grams of red caviar.We clean the shrimp, cut the crab sticks into slices, and cut the squid into rings and boil it in water for no more than 2-3 minutes. This is very important, otherwise their meat will turn into hard, tasteless rubber. Divided boiled eggs into proteins and yolks, cut the proteins into large pieces. Mix all the products, season with mayonnaise and mix. We spread in a salad bowl and sprinkle with chopped egg yolk.
- More budget balls from crab sticks are prepared elementarily, and look quite impressive on the festive table, especially in combination with various cuts. To make balls, you need to grate 300 grams of crab sticks on a grater with small holes, set aside half, and mix the second with 150 grams of hard cheese, minced in the same way, and three eggs, also grated. Add to the mass two cloves of garlic, minced with the help of the garlic, and about three tablespoons of mayonnaise, so that the mass can be formed into balls the size of a small plum. Roll each ball in the rest of the crab sticks and put on the green lettuce leaves located on the serving platter.
How unusual is it to cut meat?
A simple appetizer of sausage can be served very original, if you use a little imagination. For example, you can do this:
- Cut a fresh cucumber into circles and cut a hole in the middle into which to insert a rolled sausage slice.
- In the middle of each slice put a teaspoon of grated cheese mixed with mayonnaise, curl it up and lay out a beautiful bouquet on a dish. Also, in the center of each cone, you can insert a strip of red sweet pepper or a green onion feather.
- In the center of ham, you can lay out a beautiful chrysanthemum, for the preparation of which large round slices of ham or boiled sausage are folded in half and placed in the form of a path, laying slices on top of each other. - Connect three slices of sausage with a rose, chopped with a wooden skewer if necessary, and put olive or a small slice of cheese in the center of each.
An appetizer of ham with fresh herbs can be a real decoration on the table: in thinly sliced slices of ham, wrap two or three leaves of spinach with a slice of tender mozzarella, and for the aroma you can add a sprig of arugula.
