One of the savory sauces that are traditionally served with meat dishes is tsitsibeli. The recipe includes tomatoes, onions and hot peppers. In some variations, the sauce is made from bell pepper. We offer several cooking methods.
Tsitsibeli: recipe number 1
Typically, tsibeli begin to do in late summer, when the market has a wide variety of inexpensive vegetables. The appetizer can be served on its own or as a sauce. In addition, tsibel in banks is often closed for the winter. This treat will always be a welcome dish on your table.
Essential Ingredients:
- a pound of onions;
- a little more than a glass (250 ml) of vegetable oil;
- fresh, ripe tomatoes - about 2 kg;
- fresh garlic - about 200 grams;
- hot pepper (ground or chilli) - 2 tablespoons or 4 pods;
- salt and sugar - about 30 grams (2 tablespoons).
How to cook tsibel?
The sauce recipe is simple. It is enough to observe the correct technology and the order of bookmarking products.

Peel the onion. Grind it into half rings. Heat vegetable oil in a large frying pan or deep cauldron. Put onions in it and simmer for 20 minutes. Feed the tomatoes through a meat grinder or blender. Pour the resulting mass into the onion. Stew vegetables for half an hour.

Peel the garlic. Grind it with a meat grinder. You can use a grater or blender. You should get about 200 grams of crushed product.

If you use hot peppers, then remove the seeds from it, remove the partitions. Cut into small pieces. Put the garlic gruel, chopped pepper, sugar and salt in the tomato-onion mixture. Put out another 10 minutes.

The sauce is ready. You can use it for stewing meat or pour it into sockets and serve with dumplings, khinkali or manti. If you are preparing tsibel for the winter, then you should first prepare the banks. Sterilize them, spread the hot appetizer and tighten the lids.
Recipe for Czibeli with Bell Pepper
You will need:
- ripe tomatoes - about 5 kg;
- onions - about 1 kg;
- sweet pepper - about 500 grams;
- half a liter of vegetable oil;
- a small spoon of red hot pepper (you can take capsicum - 3-4 pieces);
- chopped garlic - 1.5 cups (about 300 grams);
- sugar, salt, ground pepper;
- parsley, cilantro, dill.
Technology of preparation
The recipe is similar to the previous one, with the only difference being that it includes bell pepper and fresh herbs.

Scroll through the meat grinder tomatoes. Put the mass in a pan and cook for an hour. Stir occasionally.

Grind sweet peppers using a meat grinder. Peel and fry the onion in oil. After it becomes translucent, add pepper. Sprinkle chilli (ground or chopped pod). Stir the sauce.

Cook over medium heat. Approximate time is 40 minutes. After that, add chopped garlic, chopped dill and parsley. Season the czibeli with salt and sprinkle with black pepper and sugar. Cook for another 3 minutes. Then cool slightly and roll into jars that need to be sterilized beforehand. You can serve freshly prepared sauce to the table.
