How to cook eggs

Probably, each of us does not even think about how to cook eggs properly - it's so simple, he poured water, and let them boil: three or four minutes, soft-boiled and almost ten minutes hard-boiled, and what else is there to know? Only then they either do not clean, or, on the contrary, burst during cooking - in general, we cannot always be fully sure of the result of such a seemingly elementary process.

How to cook eggs properly depends, first of all, on what result we want to achieve. If in the case of hard-boiled eggs it is more or less clear - in order to get them, it is not necessary to boil hard-boiled eggs correctly - just boil them longer, then soft-boiled eggs are not always obtained. But you need to remember that when cooking too long, the eggs also do not turn out very well: the surface of the yolk darkens, and it becomes stiff.

So, how to cook eggs? First of all, you need to cook them in a small saucepan so that they roll as little as possible on the bottom - this will reduce the risk of cracking. For this, you should not put eggs in the water immediately from the refrigerator - it is better to first hold them in warm water or at least just at room temperature, otherwise they will almost certainly burst. True, the risk of this all the same remains - under the shell of the egg at its dull end there is an air chamber, and when heated, it can still tear the shell, so it can be gently but strongly pierced with a needle. For reinsurance, you can add salt to the water so that it is very salty - in this case, even if the egg bursts, its contents will not leak into the water during cooking.

Now about how to boil eggs so that they can be cleaned without any problems. First, you need to take not the freshest eggs, but only those that are at least five days old. If you have only the freshest at your disposal, here you can apply one trick: you must first shake them so that inside gurgles, but not so much that the protein and yolk do not mix, and then cook for several minutes longer - then they easy to clean. After cooking, you can place the eggs immediately in icy running water and hold them there for a couple of minutes - this will also contribute to speedy cleaning. If nothing helps, then you need to break the shell over the entire surface of the egg and clean it under running water - this will be easiest.

As for how to properly boil eggs, immersing them in boiling water or in cold water, there is no definite opinion. In order to know the cooking time for sure, of course, it is much more convenient to put them in boiling water, but then the risk of cracking them will be much higher. But in the first case, the nutritional value of the eggs will be preserved more fully. After boiling hard boiled eggs, you need to cook for 7-8 minutes using the above recommendations, and an excellent result is guaranteed.

And how to cook soft-boiled eggs? Indeed, for many, the way the egg turns out is a surprise every time, and sometimes it happens that you want something specific. It is especially difficult with children who like soft-boiled eggs and do not agree to other options - that’s why mom has to experiment to the end. In this case, it is best to immerse the egg in already boiled water, and to prevent it from cracking, use the above tips and cook for 4 minutes, best of all, using the timer - otherwise you can skip the moment. You can also boil them for one minute, remove from the stove, cover and pinch for 6-7 minutes depending on the desired result - after 7 minutes the protein will finally thicken, but the yolk will remain liquid. This method seems more reliable, but you need to remember that the amount of liquid is exactly so that to cover the eggs by 1 cm.
