Peerless Caesar Sauce

Worcester sauce, grated parmesan, egg, croutons and lettuce - this is the simple composition of the dish, which has become as popular for the inhabitants of Europe and America as for the Slavs "Olivier". And this is all about him, the famous Caesar salad, the recipe of which is over 80 years old.

The "historical" name of the Caesar salad is in no way associated with the Roman emperor, as is thought in the first place. It was invented and given its name by a certain Caesar Cardini (1896-1956), an American with Italian origin. Many of his guests were sorely lacking snacks, and he was forced to turn on his wit and cook fast food from the products left in the pantry. Cardini, rubbing a bowl of garlic, put the lettuce leaves there, and added to them:

- high quality olive oil;

- grated parmesan;

- eggs made according to his mother’s recipe;

- freshly squeezed lemon juice;

- spicy herbs that were at hand;

- croutons of white bread, toasted in olive oil;

- A few grams of Worcester sauce.

Quickly mixing, Cardini distributed everything in portions to the guests. And so, with the light hand of an American of Italian origin, the Caesar sauce classic with the salad of the same name was born.

The next time, Cardini prepared the dressing separately, and sprinkled croutons on top of the salad already seasoned. “Caesar” was to the taste of a huge number of visitors, and its fame quickly spread throughout the city, and subsequently throughout the country.

And there was a culinary nuance in it, inherited by Cardini from the mother, consisting in the special preparation of eggs included in the Caesar sauce. They are boiled for exactly one minute in boiling water without boiling, and then allowed to cool for 10-15 minutes. Thus, they acquire a special taste and become the "highlight" of salad dressing.

To date, Caesar sauce has found many cooking methods. Their number is perhaps the same as the number in the world of restaurants. However, they are united by an important ingredient that brings all subsequent recipes closer to the original - Worcester sauce. It is peculiar in taste. It contains up to 40 components (some are even kept in secret). One of the ingredients is anchovies, giving it a “special” flavor. It is impossible to replace Worcester sauce, however, if it is not at hand, many use ordinary balsamic or wine vinegar or mustard.

Try making Caesar sauce, a simplified recipe that is used today.

You will need:

- 100 g of olive oil (first cold pressed);

- 1 egg;

- cloves of garlic;

- 2 hours l mustard;

- 100 g of Parmesan cheese;

- juice of half a lemon;

- spicy herbs to taste.

Dip the egg in boiling water for exactly one minute. Mix olive oil with finely chopped garlic and mustard. To the resulting mixture we attach lemon juice, an egg and beat well. Sprinkle the finished mixture with herbs and grated cheese, preferably Italian cuisine.

The following recipe will tell you how to make Caesar sauce if there is no cheese on hand.

Essential Ingredients:

- 2 yolks;

- a pair of garlic cloves;

- 1 tbsp. l olive (any other vegetable) oil;

- 0.5 tsp mustard;

- 1 tsp wine vinegar;

- 0.5 tsp Worcester sauce (sold ready-made);

- a couple of drops of Tabasco sauce;

- 1 tbsp. l lemon juice;

- pepper, salt.

Mixing well, combine mustard, wine vinegar and yolks. Continuing to beat, pour oil into the mass with a thin stream. Next, add Worcester sauce, lemon juice, Tabasco, chopped garlic and mix well. Salt and pepper to taste.

However, if you try to cook the Caesar sauce nevertheless in the classic version, you will come a little closer to history and will be able to enjoy its true taste.

For the classic version you will need:

- 100 grams of olive oil (first cold pressed);

- 2 chicken eggs;

- 1 lemon (for juice);

- 3 tbsp. l pre-grated Parmesan cheese;

- 2 minced garlic cloves;

- a few drops (5-6) of Worcester sauce.

Dip the eggs in boiling water for exactly one minute, let them cool. Combine the remaining ingredients, except for olive oil, which is added to the total mass gradually. The sauce is whisked to a thick state and optionally enriched with herbs and salt and pepper.
