Chanos, or milk fish, is common in Filipino cuisine. It mainly lives on the islands of the Indian and Pacific Oceans. This oily fish has a very good taste. It can be fried, boiled, baked and stuffed. Here are some recipes for how to cook milk fish.
Fried fish
In order to deliciously fry the chanos, you will need:
- milk fish - 2-4 pieces of fillet;
- garlic - a few cloves;
- lemon or lime juice - 4 tables. spoons;
- soy sauce - 4 tables. spoons;
- pepper, salt;
- olive oil.
Cooking dairy fish
1st step
Peel the garlic and chop in any way. In a small bowl, mix garlic, soy sauce, salt, pepper and lemon juice for the marinade. Beat the resulting mass with a whisk. A stable emulsion should be obtained. Put the chanos fillet in a bowl and cover with marinade. Make sure that the fish is covered with sauce on all sides. Cover the container with cling film or a lid and refrigerate. Dairy fish is best marinated if you leave it overnight, but you can limit yourself to a few hours.
2nd step
Use a heavy pan with a thick bottom for frying. Heat oil in it. Remove the fish from the marinade. Pat it lightly with paper towels or a towel. Too wet fillet will not allow a crisp to form. Once the oil is hot, put the pieces of fish in a skillet. Dairy fish is fried for 5 minutes on each side. It is best served with a side dish of rice and vegetables.
Tip
If it was not possible to find milk fish, then you can try replacing it with mullet. However, most likely, you will lose a little in taste, since chanos has a delicate sweetish flavor that sets it apart from the rest of the fish.
Stuffed chanos
Cook stuffed dairy fish. To do this, you need:
- two whole chanos fish carcasses;
- soy sauce, lemon juice - two tables each. spoons;
- middle head of onion;
- garlic;
- bell pepper - 1 pc.;
- 100 grams (half a cup) of green peas, canned;
- third of a glass of raisins;
- the egg is fresh;
- breading (or bread crumbs);
- olive oil;
- corn starch.
Cooking technology
1st step
The fish must be gutted, dried. Scrape the flesh of milk fish with the sharp edge of a spoon, transfer it to a bowl. Add lemon juice and soy sauce to it. Stir, cover with a film and set to marinate.
2nd step
Heat oil. Spasserut garlic and onions in it. Once the vegetables are translucent, add minced fish to them. Fry the mixture for 5 minutes. Stir. Salt, add pepper. Put the minced peas in the washed raisins. Peppers , cut into small pieces. Add to vegetables. Mix everything, try the salt. Fry for no longer than 3-4 minutes. Then set to cool.
3rd step
Stuff the skin of milk fish with the filling. Sew the edges with culinary (or plain) thread. Lightly roll carcass in cornstarch. Wrap the chanos in foil, place in a baking sheet or pan and place in the oven for 20 minutes. The temperature is 220 degrees. After this, unfold the foil and hold the fish in the oven until golden brown.
