Dumplings with cherries - taste of sunny summer

There are dishes that are timed to a specific season. Gourmets who prefer dumplings with cherries do not always wait for these fruits. They are ready to compromise and agree to the filling with cherries or use frozen berries to bring the taste of summer closer.

Dumplings - a dish of Slavic cuisine, which is very popular in the post-Soviet space, especially in Ukraine. Admirers of this dish are not limited to cherry filling, each has his own passions. In honor, dumplings with cherries and other berries, as well as meat, cottage cheese, vegetables. You can cook a dish for every taste. Also, dumplings with cherries can be cooked on a fresh dough with the addition of yeast or kefir. All options are equally good, but the hostess makes the choice, based on her culinary skills and household preferences.

To prepare the dough for dumplings with cherries, you will need the following components: wheat flour - 250-300 grams, kefir (milk whey) - 150-200 grams, water - 100 grams, 5 grams of salt, eggs - 2 pieces, 5 grams of baking soda, 50 grams of sugar.

Eggs need to be beaten with salt and a mixer in a foam, mixed with cooled boiled water and kefir. Sift flour into a bowl through a fine mesh sieve to loosen the product. Now, with a thin stream, gradually pour the liquid part into the flour with sugar and soda (without vinegar), while mixing everything with a mixer with a special nozzle to a homogeneous mass. The dough should become steep enough, so we interfere further with our hands. We give the finished mass 15 minutes to infuse at a temperature of 20-25 ยฐ C for better swelling of gluten, so that it becomes more plastic.

To make the cherry dumplings tasty and juicy, you need to properly prepare the berries for the filling. We wash the cherries under water and pour them on a towel to get the remaining moisture out. Using devices or manually, incising one edge, remove the bone from the fetus. We spread the cherries on a plate and let stand for 10 minutes to let the juice stack with berries. If you cook fresh berries out of season and use frozen cherries, then you need to take them out of the freezer in 7-9 hours and put them in a refrigerator to thaw at a temperature of no higher than 3-5 ยฐ C so that moisture loss is minimal.

Roll out the dough on a table with a thickness of about 3 mm using a rolling pin. Cherry dumplings can be made of any shape, so choose yourself. Traditionally, they are molded in the form of a month, and can be in the form of folded triangles or squares. Therefore, based on our own preferences, we cut out the blanks. If the dumplings with cherries are in the shape of a month, then we make circles; if triangular, then cut the squares. It should be remembered that dumplings are larger than dumplings in size, so the circumference and diagonal of the blanks should not be less than 5 cm. In the middle of the test of the desired shape, lay 3 cherries strictly in the center, sprinkle with a little sugar and semolina (to absorb the juice so that the dumplings do not stick out ) We fasten the edges, and the dumplings with cherries are ready.

A dish is good because you can always make it for the future. To do this, put the dumplings with cherries in one layer (so as not to stick together) on parchment paper and place in the freezer until they become hard. Now they can be folded and stored in a plastic bag or box at sub-zero temperatures. Juicy and tender dumplings will delight both in the summer and in the midst of harsh winters.

Prepare dumplings with cherries for a couple. You can simply cook by placing in boiling water, stirring at the same time, until they emerge, so as not to stick together and stick to the bottom of the pan. Then they are laid out on a plate. Serve dumplings with cherries to the table with hot, drenched cherry syrup or sour cream. To prepare cherry syrup, you need juice, which should be carefully collected. We add sugar to it (based on 100 grams of juice 10-15 grams of sugar) and cook for about five minutes on low heat until a viscous consistency. Serve in a sauceboat or with dumplings themselves in a portioned dish. You can serve dumplings with cherries and cold for tea, like dessert.
