Since ancient times, people have prepared horse meat dishes . This was especially common among nomadic peoples who widely used horses not only for riding. As a rule, the meat of a young horse was taken to prepare a dish of horse meat. The most popular cooking methods were: drying, smoking or salting, followed by boiling or stewing. Unfortunately, in our area this product has not taken root - probably because it is simply not typical for our kitchen. But in vain, because horse meat is not only high-calorie meat, but also the purest, lean and very healthy. By the way, it is thanks to these properties that it is a dietary product. Its fat content is less than three percent. However, the protein content is quite high, can reach 25% and even higher. And in terms of taste, it is superior to beef or chicken.

This product is very popular in the Tatar cuisine, since the Tatars are a people who were once nomadic. Horse meat dishes are usually prepared using spices such as garlic, onions and peppers. In some old Tatar cooking recipes, it is also advised to include a component such as koumiss or mare's milk. Garnish can be vegetables or cereals. Horse meat can be served cold, chopped, poured with special sauces taken from traditional cuisine, and sprinkled with chopped herbs. In addition, horse meat dishes are very typical for the cuisine of Kazakhs and some of their kindred Mongoloid peoples - Mongols, Uzbeks, Kyrgyz, who were nomads in the distant past. It is worth trying such an appetizing and nutritious meat.

How to cook horse meat? Firstly, meat of individuals under 3 years old is suitable for this. The meat of the old horse will be tough and not so tasty, while the meat of a ten-month-old stallion is considered an exquisite delicacy. Need a long cooking. Unlike beef, horse meat is much tougher, so cooking should take significantly more time. It is best to purchase a hip, shoulder, lumbar or dorsal part of the carcass.

How to make horsemeat soup? You will need the ingredients: a kilo of meat on the bone, homemade noodles, two onions, two - three carrots, as well as herbs, pepper and salt - to your taste. Rinse horse meat, separate from the bones. Put the bones in a pan, then fill with water, bring to a boil. Then, slightly reducing the fire, you need to cook them for two hours, periodically removing the foam. Then add meat and all other components to this broth and do not remove from heat until the main component is cooked, then strain the broth and separately cook the noodles in it. Then put the horse meat back, season with allspice and bay leaves. Serve with chopped herbs.

If you follow the recipe below, you can cook a very tasty dish. You will need: a pound of horse meat, mushrooms and lard - 120 g each, 50 g butter, a few garlic cloves, a tablespoon of tomato paste, two glasses of red wine, seasonings - salt and pepper, which you can take to taste. After melting the fat in a pan, fry the pre-chopped onion in it. Cut the horsemeat into small pieces and add it there, season with pepper and salt. In another pan at the same time, fry the flour in butter, gradually introducing wine and tomato paste. Add chopped garlic there. Combine all this with meat. If necessary, you can add water or broth. Simmer the mixture over low heat, and add about twenty minutes until it is ready to add chopped champignons.

A good dish such as a steak made of horse meat will decorate your table well. Before you start cooking, do not forget to make your favorite meat sauce. You will also need greens and seasonings: salt, pepper. Melt the butter in a pan. Then fry four horsemeat steaks on it. First they need to be rubbed with salt and pepper. Put the prepared steaks on the dish, pouring them with spicy sauce and sprinkling with chopped parsley.
