Heart dishes are not very popular in our latitudes. And completely undeserved. The health benefits of offal are obvious, and the taste of heart dishes is delicious. You can cook kebab, goulash, meatballs, fry, casserole. So, let's start choosing a recipe.

Pork Heart Cutlets

Ingredients: pork heart - half a kilo, white cabbage - half a kilo, onion - 2 pcs., French mustard in grains - 2 tbsp.

A little salt, parsley, garlic and dill, 1 egg.

Breadcrumbs, sesame seeds. Vegetable oil for frying.

We grind the heart, cabbage, onions, garlic in a meat grinder, add finely chopped greens, beaten egg, French mustard - salt and mix in a bowl. In any case, do not add any rolls, crackers and flour! The necessary juiciness will be provided by cabbage, and the addition of grains of French mustard to the minced meat gives a special piquancy. We form cutlets, roll them in breadcrumbs mixed with sesame seeds. Sunflower oil is added to the preheated pan , lay out the patties and fry. Cutlets are ready - enjoy!

Beef Heart Dishes: Goulash

You will need ingredients: beef heart (half a kilo), frying oil, a tablespoon of tomato puree, a spoon of flour, a large onion, black pepper, a bay leaf. Cut the processed heart into cubes weighing 40 grams, sprinkle with pepper, salt and fry with onions (finely chop the onion). Add flour and fry to make a thick sauce. After a couple of minutes, transfer the pieces with the sauce to the pan, add the tomato, pour a glass of hot water and simmer for one and a half hours over low heat. Some housewives lay the bay leaf in a saucepan along with tomato paste, others recommend adding it at the end of cooking.

Beef heart in beer marinade

Prepare the heart as in the previous recipe. Fold the slices in a saucepan, salt, sprinkle with ginger powder, mix with chopped onion, pour a glass of beer and lemon juice. After six hours, put the pickled pieces in a saucepan, add a couple of tablespoons of oil and half the marinade. Stew under the lid for about an hour, adding a little remaining marinade.

Heart dishes: kebab with lemon sauce

You will need: veal heart (half a kilo), garlic (2 cloves), hot red pepper (1 pod), paprika (1 pc.), Vinegar 3% (80 grams), medium onion, marinade oil (150 grams), butter for sauce (100 grams), half a lemon.

Marinade: mix crushed garlic with vinegar, salt, chopped paprika and chilli pepper, adding vegetable oil. Prepare, wash, cut the calf’s heart in portions (30-40 grams), leave for a day in the marinade. Bake on a wire rack on skewers. Serve with sauce.

Lemon sauce: vegetable oil is mixed with lemon juice and chopped onion.

Dishes from the heart of a turkey are more tender, and it takes less time to cook.

Turkey hearts in sour cream sauce

We’ll rinse the turkey’s heart (half a kilo), peel it, cut it into quarters, pepper and fry in vegetable oil for 10 minutes. Salt, add dried oregano, chopped onion and crushed clove of garlic, pour a glass of hot water and cover with a lid, simmer for 15 minutes. Add 100 grams of sour cream, mix and simmer for 10 minutes.

Chicken heart dishes : chicken heart under a vegetable coat

You will need: 2 onions, pepper, salt, a can of tomatoes in juice, 2 carrots, vegetable oil and a kilogram of chicken hearts. Cut the prepared hearts into halves, fry in oil, salt, pepper. In vegetable oil, lightly fry onions and grated carrots, salt, add chopped tomatoes in juice. Stew the sauce for five minutes. Put a layer of vegetables in the form, on top of the hearts and cover them with a vegetable coat on top. Put the mold in the preheated oven (180 degrees) for 20 minutes.

Dishes from the heart are served with boiled potatoes, mashed potatoes, buckwheat porridge, pickled vegetables, pickles.
