Liver roll is considered a dish more festive than everyday. You can cook it according to a variety of recipes, which differ in the list of additional ingredients. However, the liver pate remains the main element , which gives the dish a special aftertaste.

As a result of this “commonwealth”, we get a satisfying, wholesome and beautiful appetizer that can be used with bread as a sandwich or eat as a dish yourself. True, it is better to do this with fresh vegetables and herbs in order to “reduce” the excessive fat and calorie content of the paste.

To prepare a liver roll with butter, you will need such products:

  • pork liver - 1 kg;
  • butter - a pack of 200 g;
  • boiled yolks - 8 pcs.;
  • onions, carrots - 1 each;
  • pork fat - 300 g;
  • ground black pepper and salt - all to taste.

How to make liver roll with butter

To begin with, fat is cut along with the skin into small square pieces. Then you need to thoroughly rinse the liver, after which it needs to be dried with paper towels. Cut the liver in the same pieces as the lard. On a well-heated pan, you first need to put lard in order to fry it. The liver should be added when a decent amount of fat is leaked from the fat. Now everything needs to be mixed and fried over medium-high heat.

Peel vegetables, carrots and onions, cut into cubes and ringlets. When it brightens, you need to sprinkle the liver with salt and pepper, add chopped vegetables to it, mix, cover and cook in this position. Periodically, the lid should be raised to stir the cooked dish. When everything is ready, the pan needs to be opened and the liver allowed to cool.

While the dish is cooling, you need to boil the eggs, remove the yolks from them, and set the squirrels aside. Now the liver, along with vegetables and lard, must be passed through a meat grinder. The resulting stuffing should be crushed with a spoon to give it smoothness and elasticity. It may happen that the stuffing will turn out a bit dry. Then you need to sprinkle it with the juice remaining after roasting the liver. This must be done, as the paste should be moist.

At this time, the yolks should be grated through a sieve, which will give a bulk mass in which to add butter. These ingredients need to grind with each other using a tablespoon. Next, you need to spread the food foil on a clean table in order to lay the liver paste on it with an even, uniform and thin layer. To level the surface, you can use a rolling pin, only without pressure. After this work, the yolk layer needs to be laid out on the liver layer, spreading it over the entire area of ​​the paste. Without difficulty, this can be done if you apply a tablespoon, dipped first in boiling water and wiped dry after that.

The next step is the molding of the roll from the resulting workpiece. To do this is not so easy, it will take a little patience and dexterity. So, with both hands you should turn the paste, and separate the foil from it as the roll is twisted. In this way, the whole paste is wrapped.

The product is large, so it can be immediately divided into two parts. Now rolls need to be wrapped in foil and sent to the refrigerator for eight hours. After that, the roll is ready for use, it is well cut into portioned pieces that look beautiful thanks to the yellow filling.

To prepare the liver roll with cheese, you will need the following ingredients:

  • Dutch cheese - 100 g;
  • boiled egg whites - 4 pcs.;
  • chicken liver - 250 g;
  • boiled proteins - 4 pcs.;
  • onions - 1 head;
  • mayonnaise - 80 g;
  • gelatin - 20 g;
  • spices, frying oil.

And now we’ll tell you to cook a liver roll stuffed with cheese.

Chop onion and liver, send together to a frying pan for stewing. Cook until the onion slices are tender. Now send the liver, onion and boiled proteins to the blender for mixing. Before that, salt and spices to taste should be added to the mass.

The prepared cheese must be grated, then mixed with mayonnaise and boiled yolks. Stir thoroughly to obtain a homogeneous plastic mass.

Gelatin should be diluted in 40 ml of water. Then it should be placed in the microwave to bring to a boil, then divide the mixture into two portions. Now each of them should be added separately to the cheese and liver mass, while stirring intensively.

On a clean table, you need to spread food wrap, on which cheese mass is laid out, and then on top of it - liver. Now you need to form a roll, which must be sent to the refrigerator for cooling for several hours. After that, the roll can be eaten.

For this roll you will need the following ingredients:

  • beef liver - 700 g;
  • cream cheese "Almette" - 200-250 g;
  • mayonnaise or natural yogurt - 40-50 g;
  • Korean carrot - 300 g;
  • boiled eggs - 4 pcs.;
  • herbs, salt, spices - to taste.

How to cook liver roll with carrot

  1. Boil the liver in water until fully cooked, pass through the meat grinder a couple of times. Add minced meat to salt and pepper.
  2. Add cheese to it, stir vigorously.
  3. Stuff the minced meat on a foil in the form of a rectangular shape.
  4. Grind carrots in a blender, mix with mayonnaise. Put the mixture on top of the liver layer.
  5. Finely chop the boiled eggs, mix with mayonnaise and put on top of the carrot layer.
  6. Sprinkle the paste along the perimeter with greens and roll it into a roll. Packed in foil, send the product in the refrigerator for a couple of hours. After that, the liver roll can be eaten.
