Bream is a tasty fish, but many do not know how to cook it. Of course, you can just fry it, but there are still many ways to cook this wonderful fish. For example, an oven-baked bream is something you might like.
You will need:
1 bream (about 1 kg), 2 - 3 garlic cloves, 4 onions, a bunch of parsley, 60 gr. olives (you can take stuffed ones), sour cream or cream, 70 gr. Vegetable oil, salt, 1 slice with creamy walnut, bay leaf, 1 lemon, black pepper.
First you need to clean the bream, remove the fins and entrails, rinse thoroughly, make transverse cuts on the sides and on the ridge to pull out small bones, add a little salt, sprinkle the fish with lemon juice on the inside and outside and grate with black pepper.
Thus, the prepared bream should be stuffed with this mixture: finely chopped onions (half the norm), finely chopped parsley, butter, finely chopped olives and a little lemon zest.
The remaining chopped onions must be mixed with half the vegetable oil, salt, garlic and put on a baking sheet, on which our bream will be baked.
Put fish on this mixture, then grease the bream with vegetable oil, cover with foil and set to bake for about 5 minutes with the greatest heat, after which the foil must be removed.
Grease the fish again with a little vegetable oil and continue to bake for another 15 minutes, but now with medium heating.
Our bream, baked in the oven, is ready, it should be transferred to a suitable dish and served to your taste. Slices of apple or orange can be placed in the incisions in the fish.
You can serve boiled eggs, boiled potatoes, olives, lemon slices, vegetable salad for a side dish for this dish - almost everything you want.
In the juice that was formed when baking a bream, you can add a little broth, season to taste with lemon juice and black pepper, put sour cream and pour over the resulting bream sauce. Before pouring the baked bream with this sauce, you can first cut it into portions, then combine them again, giving them the appearance of a whole fish.
However, this, of course, is far from all the ways how to cook bream in the oven. There are many interesting recipes. For example - bream baked in the oven with buckwheat porridge.
You will need: 1 fairly large bream, a little vegetable oil, loose buckwheat porridge, 2 onions, salt, breadcrumbs.
The bream should be cleaned, gutted, washed well and grated with salt, then stuffed and baked in the oven. We make the filling: fry finely chopped onion in a small amount of vegetable oil until golden brown, pour one big plate of freshly cooked buckwheat porridge into the same and lightly fry it with onion. Then add a little more vegetable oil there, cool a little, fill the bream with porridge, sew in, grease and sprinkle with breadcrumbs, then bake in the oven. Oven baked bream can also be stuffed with potatoes or sauerkraut.
The following recipe offers a very interesting preparation of bream in the oven - bream baked in the oven in rye flour.
This bream is not a fish pie at all. The dough in this case plays the role of breading, it gives the bream a unique flavor of bread and does not allow fish juice to flow out and evaporate. Bream - the fish is very bony, so it is not suitable for the fish soup. But the bream, which is baked in its juice, with rye crust and green onions, has a great taste. Especially if it's an autumn greasy bream.
First clean, bream and gut the bream, remove the gills, rinse and dry a little. Chop the onion finely.
From about the same amount of sifted flour and warm water with the addition of vegetable oil, knead a rather liquid dough.
Rub fish inside and out with pepper and salt. Put green onions inside the bream, then coat the prepared fish with dough on all sides.
Place the bream on a baking sheet and send it to the preheated oven to 180. Bake should be 30-40 minutes until cooked.
