What is baklava? In short, this is a multi-layer baked goods, the filling of which is chopped nuts, and the layers are soaked in honey or sugar syrup. You can use yeast or butter dough, this is not so important. The main thing is to properly roll and collect numerous layers.

Sochi recipe: ingredients
According to the recipe of Sochi baklava, it is necessary to prepare the following products:
- butter - 200 g;
- baking powder - 10 g;
- wheat flour - 600 g;
- sour cream - 300 g;
- chicken egg (yolk) - 2 pcs.
These products are required for making dough. But for the filling of Sochi baklava, the following positions are needed:
- chicken egg (proteins) - 5 pcs.;
- walnuts - 300 g;
- cinnamon (powder) - 10 g;
- granulated sugar - 250 g.
To decorate the surface of baklava, you should take:
- walnuts - 1 pc. on the cake;
- chicken egg (yolk) - 3 pcs.;
- honey - 200 g.
Sochi baklava recipe
Many, having seen such an impressive list, may think that only professional chefs can cope with the preparation of baklava, however, housewives can easily prepare this oriental sweet at home, it is only important to strictly follow the instructions.
First of all, you need to chop walnuts with a knife. In this case, their aroma and special taste will be preserved.
Put the proteins in a deep container, add sugar and beat with a mixer. As soon as you get a stable foam, add cinnamon powder and chopped walnuts.
Pour flour, butter and baking powder onto a large cutting board. We mix everything, add the sour-yolk mixture to the resulting mass (in a separate container, mix the yolks and sour cream). Knead the dough thoroughly. After we divide it into 3 equal parts. We roll one part into a pancake. We cover the baking sheet with parchment paper, generously grease it with vegetable oil. Laying the resulting pancake on paper, leave in a preheated oven (up to 200 degrees) for 15 minutes.
While preparing the first cake, roll out the second, also lay it on a sheet of parchment richly greased with oil. We shift half of the nut-protein mass into a separate container and lay it on the cake, leveling with a spatula. On top we place the already baked cake, and on top of it we apply the rest of the protein mass.
The third part of the dough is also rolled into a thin pancake. We put it on top of the already finished two. It is important to slightly press the resulting design. This recipe for Sochi baklava implies an intermediate stage, when there are three layers in baking - the middle one is baked, and the lower and upper remain raw.
One of the most important stages of preparation is to carefully cut the dessert into rhombuses (beginners can divide the layers into squares, it’s easier). In the center of each piece, you need to place a walnut, slightly pressing. Lubricate the entire surface of the dough with yolks whipped in a blender. Now you can send the Sochi baklava to bake in the oven. The temperature regime of the oven is 180-200 degrees. Baking time: 30 minutes.
After this time, we take the Sochi baklava from the oven and pour plenty of liquid honey. Important! The honey must be preheated, but it is not necessary to bring it to a boil. Once the dessert has cooled, it can be served on the table.
Cooking Baku Baklava: ingredients
To prepare the dough, the following products should be prepared:
- milk - 250 ml;
- butter - 100 g;
- sugar - 1 tbsp. l .;
- wheat flour - 1 kg;
- egg - 1 pc.;
- dry yeast - 1 tsp.
For the filling, prepare the following items:
- walnuts (crushed) - 1 kg;
- vanillin - 1 tsp;
- granulated sugar - 1 kg;
- nutmeg - 1 tsp;
- cardamom - 4 tsp
For pouring, you need to take: 400 g of butter and 2 cups of liquid honey. In addition, you will need to take 2 chicken yolks, as well as 1 tsp. saffron.
Cooking Baku Baklava: a step by step recipe
We mix all these products for the preparation of the dough in a deep container. Knead the dough thoroughly and leave it in a warm place for 30-40 minutes. You can cover with a towel.
At this time, chop the nuts with a knife. Mix them with cardamom, granulated sugar, nutmeg and vanilla. When the specified time passes, we take out the dough and divide it into 2 parts. The first half is divided into 12 parts: 2 large and 10 small. We roll out a large ball, put it in a baking dish. Press lightly with a spatula and spread part of the filling over the entire surface. After we roll out a small ball into a very thin layer and spread it on top of the filling. Between each layer lightly grease the filling. So roll out all the little balls. We roll out the second large ball in the same way and hold all the layers together.

The resulting "cake" is cut into small diamonds, holding the dough with your fingers on both sides of the knife so that the dough does not rise up. It is necessary to cut through to the bottom! Put a nut in the center of each rhombus. Grease the top layer with a mixture of yolk and saffron. We send in the oven preheated to 180 degrees for 15 minutes. After the top of the baklava, pour 200 g of butter (pre-melt). Once again poison in the oven for 25 minutes. Then we take out and pour the baklava with honey. And again in the oven for 5 minutes. That's all - the baklava is ready!
How to check the quality of baklava
- When pressing the rhombus, the baklava on top and bottom of the layers should show oil and syrup.
- Layers of baklava should be almost invisible, which is why it is important to roll pancakes of dough almost to zero.
