Salt is added last, just before frying, so that additional juice does not have time to stand out. Mix the dough well. It should not be liquid. Vegetable oil is poured into a well-heated pan, then using a tablespoon (experienced chefs recommend using it to get nice flat cakes), spread the dough. Fry flat cakes on both sides well. To get softer pancakes from zucchini, cover the pan with a lid. If you fry in an open pan, the finished product will have a crisp. Itโs best to try both.
