Potato pancakes. Recipe

The traditional Belarusian dish - potato pancakes - is so popular in Russia and Ukraine, and in fact in other countries, that it can already be mistaken for Slavic nationality or even internationality. Although Belarusians believe that cooking real pancakes is possible only from root crops grown in the historical homeland of this very unpretentious, but very tasty and satisfying dish. But since we did not try the potato pancakes prepared in the original, we will have to be content with those ingredients that are available.

Potato pancakes are served , the recipe of which is given here with sour cream or with the popular Belarusian β€œmasanka”, which must be prepared in advance in order to be served with potato pancakes β€œwith heat, with heat”. To prepare this unusually tasty sauce, which gives the pancakes a special aroma and taste, you need to take the following components:

  • smoked sausage;
  • a small piece of ham;
  • salted pork ribs;
  • melted lard;
  • sour cream.

Preparation: Finely chop the ingredients, put them in a pot, add sour cream and melted lard and simmer in a preheated oven for 40 minutes.

How to cook potato pancakes ?

Ingredients:

  • five potatoes;
  • one chicken egg;
  • Β½ tsp black pepper (ground);
  • a pinch of salt;
  • one onion;
  • clove of garlic (optional);
  • two tablespoons of refined sunflower oil.

Cooking:

  1. The potatoes are grated, alternating with onions, thus avoiding the darkening of the grated potatoes.
  2. In the mashed mass add egg, salt, pepper, garlic (to taste and desire), knead with a spoon. If the minced meat turned out to be too liquid, it is best to pour in starch (a couple of spoons), some pour in flour, but this is not desirable - potato pancakes, the recipe tells you, will not be lush enough.
  3. Draniki is fried in a well-heated pan with vegetable oil (it is worth avoiding that the draniki are completely immersed in the oil and even floated in it) on both sides, turning from one to the other a couple of minutes until golden.
  4. Cooked potato pancakes are served with sour cream or ripened in the oven "machanka" potatoes.

The recipe for this dish is not the only one, some advise adding carrots, soda, slaked vinegar, and other various ingredients. However, the classic potato pancake recipe contains potatoes, onions, eggs, peppers and salt, the rest is a matter of taste. Many improvisation lovers add all kinds of products during cooking (sausage, sausages, etc.) - it always turns out very tasty and quite unusual.

Potato pancakes with meat

Ingredients:

  • one kilogram of potatoes;
  • 300 g of minced meat;
  • one onion;
  • 1-2 chicken eggs;
  • black pepper (ground) and salt are added to taste;
  • for frying - vegetable oil.

Cooking:

  1. Prepare products: polish potatoes, onions, grind minced meat.
  2. The potatoes are grated (fine).
  3. Squeeze the mass, add salt, eggs, pepper.
  4. In minced meat put chopped onions, salt and season with black ground pepper.
  5. Grated potatoes (like pancakes) are spread in a thin layer on a frying pan with heated vegetable oil.
  6. On top of each "pancake" put minced meat.
  7. Cover the ground beef with a thin layer of ground beef.
  8. Fry over medium heat until golden brown on both sides.
  9. Then put all the pancakes in a pan and simmer for 5 minutes over medium heat.
  10. Served hot with sour cream or other sauce, just like potato pancakes, the recipe of which is given above.

Thus, they prepare this amazingly delicious national Belarusian dish , which is well suited for both a family Sunday dinner and a noble treat, not inferior in taste to any other, even the most sophisticatedly prepared dish.
