A step-by-step recipe for ravioli with spinach and ricotta cheese is as follows:

  1. Knead the dough from flour, eggs and yolks. In the meantime, it is resting in the refrigerator, it's time to do the filling.
  2. Wash, dry and chop the spinach leaves (300 g).
  3. Pour a little vegetable oil (2 tbsp.) Into the pan and put 30 g butter. Strain the spinach in this mixture for 5 minutes, until it decreases in volume.
  4. Remove the dough from the refrigerator and roll it thinly on a flour dusted surface.
  5. In a deep bowl, mix the cooled spinach, ricotta (300 g), nutmeg (ยฝ teaspoon), salt and 4 protein whipped with a fork, remaining after kneading the dough.

  8. Melt 40 g butter again in a pan, then add a few spinach leaves, cream (70 ml), salt, pepper. Bring the sauce to the required consistency and serve with pre-cooked items.

  1. Shrimp (200 g), if necessary, thaw and peel.
  2. Grind shrimp and spinach (200 g). Combine the ingredients with ricotta (300 g). Add the zest of 1 lemon and salt to taste.
  3. On a rolled dough sheet, put a teaspoon of filling in the form of balls every 5 cm. Form the products and send them to the freezer for 15 minutes.

  3. In a bowl with flour (350-400 g) pour the spinach dressing, add a little salt and knead the dough.
