Pork with a thin layer of fat on top or inside is best suited, so the meat will turn out more juicy. Therefore, it is better not to take the tenderloin. See that it is a smooth, oblong piece resembling a reduced loaf of bread. Meat from the neck or shoulder blade is well suited. See that it is not windy or dark in color.

The dish "Accordion Pork", the recipe for which is presented below, requires careful attention only in the first fifteen minutes, then put it in the oven for an hour and you can forget about it.

Ingredients

For cooking, we need the following ingredients: about one kilogram of pork, a couple of tomatoes, about two hundred grams of cheese, four cloves of garlic, spices - any to your taste, the presence of black pepper is desirable, but this is not a prerequisite. Caucasian and Abkhaz mixtures are well suited to meat.

The first thing to do is thoroughly rinse the meat and dry it with a paper towel. Then we make cuts in it every half centimeter (a little more often) for three quarters of the thickness of the pork.

If you pre-fry the meat for 2-3 minutes in a hot frying pan, it will look prettier and turn out juicier. My tomatoes, cut out a place with a twig, cut into rings. This is most conveniently done with a knife, either very sharp or with cloves. Cheese can already be bought with slices or cut yourself. Garlic must either be crushed or squeezed through a special device.

Spread the meat with salt and cooked spices. Pork baked with accordion will be tastier if the cuts are also seasoned with spices. Then in each resulting hole we put tomato, cheese and garlic. We do this with the whole piece. Garlic can be mixed with all the spices in advance. Top with a little seasoning mixture.

Wrapping the meat with foil several times, put it on a baking sheet or in a special dish. Then put in the oven for an hour. The temperature should be about two hundred degrees, a little lower. "Pork accordion" in the oven can be an hour and a half, but then the piece should be larger, for example, 1.5-2 kilograms. However, the easiest way is to get it in an hour and see how ready it is.

The last stage of cooking

Then remove the foil from above and put it back in the oven for a short while so that the meat is slightly browned. If you have the "Grill" function, then enable it better. If not, then pork must be rearranged to the very top. When the crust appears, the pork is ready. The meat is served on a large plate, garnished with greens. You can put a side dish on the same dish. Whole potatoes or mashed potatoes look spectacular, but vegetables, of course, do not interfere. Good appetite!
