The baked boar knee is a Czech crown dish. The original recipe for its preparation has long become national and is offered in all institutions of the country. At the same time, it resembles the usual cooking of pork shank in the oven, which they so love to bake in Ukraine and Russia.
Ingredients
For cooking you will need:
- pork knuckle - 1 piece;
- beer - 2 liters;
- garlic - 4 cloves;
- allspice - 15 peas;
- black pepper - 10 peas;
- ginger root;
- Bay leaf;
- sour apples - 2 pieces;
- honey - 100 g;
- salt;
- nutmeg;
- soy sauce - 50 ml;
- coriander;
- parsley;
- celery.
Meat preparationThe pork knuckle in the oven, the recipe of which involves baking in Czech, is chosen so that the knee itself is in the middle. Thanks to this, it will turn out juicy and with large pieces of meat. The handle is previously treated on an open fire to get rid of the remnants of the bristles. Then it is washed thoroughly and scraped with a knife. After that, small cuts are made on the meat, into which pieces of garlic are placed. Ideally, they should be 25 pieces. Then the knuckle is rubbed with a mixture of peppers and salt. It is in this form that it must be pickled.
Pickling
In order for the pork knuckle in the oven (a recipe for baked boar knee) to be juicy, it is pickled in beer. To do this, put greens, half a nutmeg, peas and a little bay leaf in a large saucepan . Ginger root, cut into small pieces , is added on top. Next, put the knuckle and fill everything with one liter of beer. Then everything is salted and covered with chopped apples (without peel and seeds). After that, pour the remaining beer, since it is with it that the pork knuckle in the oven is well obtained. After this time, the meat is boiled in the marinade for about an hour, although many cooks prefer to stand it for another four hours without resorting to cooking or any other processing.

Then we wrap everything in foil and cook the pork knuckle in the oven for two hours at an oven temperature of 180-200 degrees. Ten minutes before readiness, the meat is expanded and baked for another ten minutes to form an appetizing crust.
