Capelin caviar is a natural product that is obtained from the salt of sea โโfish belonging to the smelt family. This is a fairly small product with a dense consistency. People call it โwhite caviarโ. Recipe number 1. Capelin in tomato sauce
To prepare fish in this way, the following products are needed:
- vegetable (unrefined) oil;
- 800 g of fresh capelin;
- 1.5 tbsp vinegar (3%);
- half a glass of tomato puree;
- bay leaf ;
- salt;
- sugar, ground pepper.
We start by spraying the fish with half- vinegar table vinegar . After this, the capelin needs to be dried and put in a shallow dish (the backs should look up). Mix the ingredients such as tomato puree, oil, spices and vinegar. The resulting mixture is filled with capelin. Now stew our dish over medium heat, tightly closing the pan or pan with a lid. The preparation time of capelin in tomato sauce is 40 minutes.
Recipe number 2. Capelin "hot smoked"
So, for its preparation you will need the following ingredients:
- peas in the form of peas;
- 500 ml of vegetable (unrefined) oil;
- 1-2 kg of fresh capelin;
- Bay leaf;
- salt.
We take out the capelin from the freezer and defrost it, rinse thoroughly with cold water. After that, carefully lay the fish on the bottom of the pan. At this stage, add salt and peas and two bay leaves. Spread the capelin again, then another layer. Pour the oil into the pan so that it is flush with the laid fish. If you stack the layers denser, you can save oil. It remains to put the pan with capelin on the stove, bring to a boil and simmer over low heat for 15-20 minutes.
