Tsvetaevsky pie: a recipe with a story

Once upon a time, somewhere at the beginning of the last century, two sisters lived in Russia. Beauties, clever and truly talented girls had many admirers who appreciated their cheerful disposition and amazing ease of communication. And they had an amazing surname - Tsvetaeva. Many of the young boyfriends were entering the house, where they spent evenings with literary conversations, delicious strong tea and apple pie with an amazing aroma. The details of this story have long sunk into oblivion, but even now in Russia it is customary to treat guests with this unique dish, which became known in honor of the sisters - Tsvetaeva pie.

In addition to the fantastic taste and unique aroma of apples and cinnamon, this dish invariably pleases the housewives with the simplicity and speed of cooking, so if you know this recipe once, you will love it forever. So, in order to cook independently Tsvetaevo pie, we need:

  • apples for toppings. They need to take about a kilogram. You can do with a smaller amount, but then all the charm of the filling disappears, because there must be a lot of it. You should not take overseas fruits for this case, attracting a glossy sheen from the supermarket shelves. It is better to do with a fragrant domestic Antonovka - with it, the cake will be tastier, and historical authenticity will be preserved.

For cream:

  • 1 cup of good thick sour cream. Pie Tsvetaevsky, of course, does not allow the use of liquid modern sour cream. Here you need to choose a product with at least 20% fat, and it is better to try and find 30% sour cream. Only in this case the cream will become real, tender and melting.
  • 1 chicken egg (if the eggs are too small, take two);
  • 2 tbsp. spoons of sifted flour;
  • a glass of sugar (a little less if you really care about the figure).

For the test:

  • 150 g of good butter (do not take cheap spreads or margarine);
  • half a glass of sour cream (the same as for cream);
  • one and a half glasses of fine, carefully sifted flour;
  • a little vinegar slaked with vinegar.

First, prepare the filling - peel our fragrant apples and cut them into small cubes. If the variety of apples is too sweet, they can be sprinkled with lemon juice - it will give a taste of piquancy. Then we prepare a cream that will make our Tsvetaevo cake tender and rich. To do this, mix all of the above components and whisk with a whisk or a mixer until smooth (you do not need to beat for a long time, 5-10 minutes are enough).

When all the preparatory work is completed, we knead the dough, in consistency it should resemble melted plasticine - be gentle, soft and moderately viscous. After this, put the dough into a mold greased with oil, and carefully distribute it with a uniform layer along the bottom and sides. We spread the filling on the dough - first chopped and peeled apples, then whipped cream.

It is usually not necessary to mix the filling - the cream turns out to be quite liquid and it distributes it over apples. Pour the cream so that it gets around the entire circumference of the form, filling the space between the apples. We send the fully decorated Tsvetaevo pie to the oven. It must first be warmed up to 180-200 degrees. The time required for cooking is from half an hour to forty-five minutes.

After this time, remove the cake from the oven and sprinkle with ground cinnamon before serving. Everything - Tsvetaevsky apple pie is ready to be served.

In addition to the traditional recipe filled with apples, there are more modern options with fruit and berry fillings. In fact, it is no longer possible to call such a cake Tsvetaevsky, but it does not become less tasty due to this.
