Delicious fried chicken with a crust will work if you cook chicken tobacco. This dish can be made in various ways: bake in the oven, in a pan, add additional ingredients to it. We offer several recipes.

Tobacco chickens in the oven

You can bake chicken and potatoes simply, tasty and quickly. To do this, you will need:

  • chicken carcass;
  • spice;
  • salt;
  • several medium sized potatoes.

Rinse the meat, dry with a napkin. Cut the carcass along, along the line of the spine. You can make two halves or leave one in the “expanded” form. Rub the chicken with salt and spices. For baking, use a heat-resistant bowl. Lightly grease it, put the meat in the middle. Wash and peel the potatoes. Better if the tubers are small, so they bake faster. Cut each potato in half, lay next to the chicken. Cooking chicken in the oven takes approximately 40 minutes. The time may differ from the indicated if you have more meat and potatoes. In any case, before you get the dish out of the oven, determine its readiness - pierce the chicken with a knife, the juice should not be red.

The photo shows how the finished dish should turn out. Ideally, the chicken should be fried in a special flat pan, pressing the meat on top with a heavy load. In Uzbek cuisine, the word "tawak" exists, which means flat dishes and plates. Varying, the word came into Russian. Hence the name of the dish - “tobacco chickens”, that is, fried in a flat bowl. But no matter how tobacco chickens are cooked - in the oven or in the pan, the recipe remains the same. You will need:

  • two chicken carcasses;
  • spices (sumac, thyme, sesame; Svan salt, which can be replaced with a mixture of salt, garlic, coriander, fenugreek);
  • butter - 50 grams;
  • water;
  • melted butter.

Prepare carcasses: wash and cut along the ridge. Do not separate them to the end. Anneal the sesame seeds in a pan until a light aroma flows from it. Mash the spices in a mortar, then add a melted piece of butter to them. Lubricate the chickens with the mixture and leave for 40 minutes. Pour a little water into a pan without a handle or pan, add a piece of melted butter and lay the chickens. If you cook on fire, then press the pan overhead with a load. Tobacco chickens in the oven do not require this. It is recommended to turn the meat over several times in the broth so that it can be stewed properly. When the water evaporates, turn the carcass over again so that a brown crust forms on both sides. Chicken is cooked for about 40 minutes. Everything will depend on what size carcass you come across. After the indicated time, the tobacco chickens in the oven will be ready.

What to serve?

Often chickens are served with herbs and tomato sauce. Try replacing it with pomegranate, quince or cornel - and the dish will sparkle with new tastes. From greens, you can serve salad leaves, parsley, dill. Heat the tomatoes for the chicken chickens in the oil remaining from the meat. It will turn out an interesting and bored version of the side dish.
