Dumplings with meat is an extremely popular dish of Ukrainian cuisine. There are a variety of recipes. The dish is served to the table with sour cream, all kinds of gravy. Classical Poltava recipe

It is well known that the tradition of cooking dumplings with meat comes from the city of Poltava. Every year mass events are organized here dedicated to everyone's favorite dish. At the festival you can taste flour dumplings, supplemented with vegetable, fruit, berry fillings. However, meat dumplings are still in greatest demand, the recipe of which will be discussed later.

A traditional dish is prepared as follows:

  1. Sift wheat flour in an amount of 500 grams. Add a dessert spoon of soda and a pinch of salt. About 350 grams of kefir are poured into the container. The ingredients are combined with a chicken egg.
  2. Knead the dough thoroughly so that the product is dense according to the consistency. The base of the dish is covered with a towel and left alone for about 40 minutes.
  3. Boil half a kilogram of pork. Grind the meat with a meat grinder. Add salt and pepper to taste.
  4. Peel several large bulbs from the husk. The ingredient is crushed and then passaged in a pan using vegetable oil. Onions fried to a light golden hue are combined with minced pork.
  5. The dough is rolled out with a rolling pin in a thick layer and divided into small dumplings. Round cakes are formed from pieces. A meat ball is placed in each blank and the edges of the flour products are joined.
  6. Dumplings are placed on a lattice of a double boiler. Between each meat dumpling leave free space so that the workpieces do not stick together during cooking.
  7. The dish is cooked for 10-15 minutes. Then dumplings with meat sent to a capacious container. The dish is poured with warmed butter.

Consider the variation of a dish with the addition of potatoes. Take beef or pork meat on the bone. The product is boiled with onions and carrots. When the ingredients reach half-ready, 5-6 medium-sized potatoes cut in half are placed in a container.

Sifted 800 grams of flour. Salt and egg are added here. They knead a dense dough, and then roll out a little more than one centimeter thick. The workpiece is cut into strips, which, in turn, are divided into small dumplings.

Ready meat and potatoes are poured into a plate. Carrots and onions are thrown away. The remaining broth is left in a saucepan, where previously prepared dumplings are boiled.

A little vegetable oil is poured into a hot pan and a tablespoon of tomato paste is fried for several minutes. After cooling to room temperature, a couple of garlic cloves are squeezed into such a sauce.

Dumplings, boiled potatoes and minced meat are placed in a large dish. The dish is served to the table with the addition of broth and tomato-garlic sauce.

450 grams of wheat flour are sieved into a capacious container. A pinch of soda and salt is thrown here. Break the chicken egg and pour half a liter of kefir. The ingredients are thoroughly mixed until a homogeneous consistency. They form a rather tight, but at the same time elastic dough.

400 grams of chicken are cut into small pieces. Chop a large onion and 300 grams of champignons. The ingredients are slightly fried. Add salt and pepper to taste.

Dumplings form a size of no more than 2 centimeters from the dough. Flour products are boiled in salt water. Ready dumplings are placed on a roomy dish. On top lay the frying of meat, onions and mushrooms. As a sauce, use sour cream.

Chicken Dumpling Soup

About 300 grams of chicken fillet is boiled in a liter of water. Grated carrots are fried in a pan. Dice a few medium-sized potatoes. The ingredients are sent to the pan to the chicken meat and boiled for 15 minutes.

Take 4-5 tablespoons of flour. A chicken egg is broken here, a mixture of herbs is added. All mix thoroughly. Pour slices of dough with a spoon and throw into a boiling broth. The dish is brought to condition for 5-7 minutes at low heat. Ready soup with dumplings with meat is poured into deep plates and decorated with parsley.

Bring to a boil about 2 liters of water. 3-4 small potatoes, diced, are thrown here. Grated carrots and onions are added. The ingredients are boiled over moderate heat for 10-15 minutes.

Prepare the dough by combining a glass of sifted flour, chicken egg, salt and ground pepper. 300 g of smoked sausage, chopped into cubes, are fried in vegetable oil. After the appearance of a light crust, the product is sent to a pot with broth from potatoes, onions and carrots. Small dumplings are torn off with hands or a spoon from the dough and also thrown into boiling water after the sausage. The soup is salted and pepper. The dish is cooked for another 10 minutes.

Dumplings with chicken

The chicken carcass is thrown into boiling water and boiled until tender. The meat is removed from the pan. The broth is poured into a container of a suitable size. Grind carrots on a grater, cut onion into small cubes. The ingredient is placed in the broth.

Sift 5-6 tablespoons of flour. Pour in the chicken egg. Add 50 grams of butter. Prepare the dough, the consistency of which is similar to a thick sour cream.

They put another pot of water on the stove. Dumplings are formed from the dough with a spoon and thrown into boiling water. Finished flour dumplings are removed from the water, and then transferred to a container with broth. The dish is flavored with herbs and ground pepper. Boiled chicken is cut into small pieces in a deep plate. Pour broth with dumplings here. The dish is served at the table.
